Great and unique food items yes, but a bit costly and very long waits between plates. 2 hours 15 mins for 7 courses seemed long to us. Smaller courses that don't always fill you much by the very end given the longer duration. Quite delicious and unique no doubt we agreed. Just not sure the food amount and long waits make $85 a person without drinks, purely worth it is all. Great service yes, great menu design yes. Very neat decor and dining room set up also. Just a tad costly and overly extended time frame for me give 4 or 5 stars compared to many other tasting dinners I've done like this before.

Fantastic experience fine dining in Marfa! My family and I came here for my dad’s 65th birthday dinner tonight. The food was excellent, and they continue to produce at a very high level. Our waiter was super friendly, and they were even accommodating to a specific dietary request for a member of our party. I’ll look forward to coming back to Cochineal anytime I am around! We love the food! Given the whole experience of the prix-fixe menu, value for money was spot on!

Excellent experience of fine dining in Marfa! Our group had multiple food allergies and preferences, but we provided advanced notice they were able to accommodate us beautifully. Great service and creative dishes. We especially liked the natural wine and the game meat. Some room to improve on the cocktails, none of them quite hit the mark for me.

We came for the Japanese tasting menu at $85/pp in Jan 2022 and sat outside. I’d wish I read other more recent reviews which speak to issues we experienced. Service 3/5: Despite having a reservation our table wasn’t set for our group size. Once seated, three different wait staff explained the menu to us three different times. Our biggest complaint is the coursing. We got our first 2 courses in 20 minutes then every course after that took 30 minutes each. We arrived at 6:30 and finished 3 hours later at 9:30. That’s 25 minutes between small tasting menu courses. An hour and half in and we were still so hungry we jokingly considered leaving to get barbecue. The waitress was nice but overall service needs attention. Food 2/5: The Japanese menu was hit or miss with some good elements but generally under seasoned and needing work. The amuse was watery, none of the bright acid or crunch or umami it could have been. The jalapeños on the fish were good and spicy but a large piece of thinly sliced sashimi was served with chopsticks which made it impossible to eat. Next was a tempura course that was solidly executed. Hot, substantial crisp, and cooked well. The serving for 4 people was not enough. We each got 1-2 pieces. What we got next was a piece of sable fish and ours hadn’t been deboned (10-15 toothpick sized bones). For a super buttery soft fish the skin wasn’t crisp, there was no brightness or balance to the fish and it ate soft on soft. The boar was good, the sauce work was great but again, a piece of bone in meat was served with chopsticks. The beef course with rice was bland and the mushrooms chewy. Dessert was a high point. For 4 of us each with 1 cocktail the bill came to $500. Overall, the food wasn’t worth the price, the ambiance and service was just ok and the execution had major problems. I’d skip it.

A fantastic dinning experience. Fresh ingredients and thoughtful meals. Staff is patient and attentive. If you have the opportunity to try the Curated Prix Fixe Dinner I certainly recommend it, although you will have to make reservations in advance. Wine pairings are a must.
