Earth Inspired Salads

Life is all about balance right?! I'm always on the hunt for a healthy, quick lunch spot downtown during the work week. I recently was treated to lunch at Earth Inspired Salads in the Alcoa building, across from Hotel Monaco, Kimpton. Love a place where I can build a healthy salad with all the fun tasty fixin's Plus it's a great spot to support local as Earth works with local communities, farmers and sustainable partners! All around a lunch spot to feel good about. I enjoyed the Bovine Bleu salad all the ingredients were fresh & tasty, the steak was cooked well. Also tried the Southwest Turkey Wrap which was interestingly made with ground turkey versus sliced deli-style meat. Also tried the Wok This Way Pad Thai rice bowl with shrimp. The flavor was nice and light, almost refreshing - not the in your face kind of curry which is actually great for lunchtime in my opinion. Definitely would recommend for lunch time healthy eats, not a long wait like similar spots are downtown.
