An air of je ne sais quoi. I went in for some spare ribs and ground beef. A fair amount more expensive than a grocery store but I'm hoping the quality is worth it. I could have enjoyed a better experience at the register but we all have our days ( working on a Sunday ☹️). I'll be coming back for some dry aged steaks 🤤.
I just polished off The Italian sandwich. I do not know how I ever lived without this. My partner got the Lamb Meatball, and we are going to dream about these sandwiches.
The selection of meats and sausage was phenomenal. Add in the local goods, and I think I found Heaven on earth!

Just had my wedding and they absolutely made the night. The brisket and pork were the talk of the night. I heard many comments about how it was the best cornbread a lot of people have ever ate. The coleslaw was completely finished which shocked me big hit. Also the beans were delicious as well. Bravo and thank you again for providing great food for my wedding! Also the dessert platter was off the charts as well can't forget.
I came in asking for a meat cut that was not on display. The person doing the butchering stated the type of animal had arrived that morning and he cut what I needed as I waited. It was incredibly good service and the meat was wonderful for the dish we needed for. I'll be back again!!
Underground Butcher is a craft butchery specializing in pasture-raised meat from local farms. They're well known for their charcuterie and handmade sausages. The Underground Butcher also sells high end beer, wine and cheeses. They also offer a limited sandwich menu that is worth checking out. Their Pork Belly Sandwich is superb. The flavorful pork belly had a pleasing sear on it. The sandwich was served on a freshly made ciabatta roll with whole grain mustard that truly complemented the other ingredients. It was once of the best sandwiches I've had in recent memory.
I walked in at 10 am on a Sunday (they open at 10, mind you) and the butcher was just stocking thr case. He took time to offer suggestions on meat, how to cook it, and what choices we have before he was even fully ready. Bought the best steak I've ever eaten, and it was massive. The meats are only slightly more expensive than grocery stores and the quaint blows them out of the water.
That butter though. Not cheap, but paired with some Madison Sourdough from across the street is effing amazing.
Amazing service, incredible quality meats. Stopping here anytime I'm in Madison now. Anthony was of great help and was very nice. Excited to get home and tear into this brisket.
