Cleaver- Butchered Meats, Seafood & Classic Cocktails

Cleaver is like a nice steakhouse on the strip, except that it’s easier to get to and lives up to the hype. Cleaver was a welcome surprise. The atmosphere is welcoming. You feel like you’re in an entirely different world once you step inside. The food is across the board well made and genuinely enjoyable. We had mussels, bread, Burratta salad, and prawn pasta which was AMAZING and far exceeded my expectations. It tasted like the noodles had been hand made moments before coming to the table. Our server was so sweet. I went for a business meeting and while the restaurant is lively, it’s not too loud, so we could hear each other well and have good conversation throughout our meal. Dessert was great too! Lava cake 😍

Cleaver is excellent. Hands down excellent. I can’t say for sure it’s the best steak in vegas since I haven’t had them all. But it’s the best steak I’ve had. Cocktail list is great and has something for everyone. The staff is great at recommending items if you are looking for help on the menu. The tomato sauce with the clams is incredible btw. I hadn't been in for awhile. But, friend had never been there. So, we decided to go. We had reservations. We arrived early and seat at the bar ! Both bartenders we Interacted with were very friendly! We were seated at the back of the restaurant. Wasn't really happy about that! But, it worked out fine. Because of our server Julia and busser Alex! They were very friendly and nice! Plus they took care of us! The food was absolutely delicious! ⭐️⭐️⭐️⭐️⭐️And the service was excellent!⭐️⭐️⭐️⭐️⭐️ I couldn't believe how clean the men's bathroom was! ⭐️⭐️⭐️⭐️⭐️

We sat at the bar and had a phenomenal bartender. Kane went above and beyond to make us feel welcome, and he offered suggestions from the menu. I was very impressed with his knowledge of each element for all of the dishes. We had the filet Philadelphia style, the ribeye med rare, the loaded baked potato, oyster shooters, lobster tail, and bone marrow with blueberry demi. The bone marrow is literally meat butter! The blueberry kind of took away from the delicious richness of the marrow. The reddish salad needs a little more vinegar or tartness to cut through the fat. But overall, I just love bone marrow. The filet was cooked perfectly and seasoned very well. They also offer sauces and crusts for the steaks. I chose Philadelphia style, which is charred and rare in the middle. Again, it was cooked perfectly! I ended up with the creamy horseradish and the cleaver steak sauce. Both were really delicious, and I could've drank either one. So yummy. The ribeye we got with the blue cheese crust. I understand blue cheese is an acquired taste, but I highly recommend this addition. Again, it was cooked perfectly and seasoned well. Since it's butchered in house, you're getting a beautiful cut of meat. We ordered the oyster shooters, one with mezcal and one with vodka. Both were absolutely amazing. The smoky mezcal with the briny oyster was a great pairing. Great flavor and mouth feel. Very fresh! The lobster tail was cooked to perfection. It had a creamy and herbaceous sauce and was presented beautifully. Worth the $$. The loaded baked potato had crispy pork belly, butter, creme fraiche, and a lovely cheese (can't remember the name of the cheese). Lastly, inquire about the happy hour menu. It is very generous and priced appropriately. If you go here sit at the bar and chat with Kane! Absolutely amazing bartender and really added to the experience. The rest of the bar staff were also never idle, always on top of clearing dishes or engaged with customers. Will definitely go here again! Thank you Kane!
