Fresh, healthy, delicious: Local sandwich and homemade soup spot with warm, inviting character and atmosphere. Probably the best tuna fish sandwich ever: well constructed, light, crisp filling mix with a spicy hit tucked into freshly baked ciabatta. Freshly made veg-fruit juices; I also tried an avocado-chocolate smoothie...oh so good and satisfying. Great homemade soup, they have a few daily selections and cases with frozen scratch-made cartons of even more soups to take home. I used to freeze my homemade soup when I cooked alot. It's so delicious reheated and healthier than store bought. None of those additives, too much sodium etc. The guacamole was fresh, homemade, citrus finish. Great food isn't hard if you make it with fresh healthy ingredients and know how to put together the right combinations. Bravo! Great service too with a 😃. A new healthier and delicious take on sandwiches. Y u m ! See pics.

If you are looking for a quick bite, or for something healthy for grab-and-go, then this is the place! Our smoothies were great, and my turkey red pepper sandwich was very tasty. Everything was made very fast, too!

We really love The Parsley. The turkey and fig sandwich is so so good! I've also had the Mediterranean Tuna salad - so so good! I just had the fig and Brie sandwich and it was wonderful. While waiting in line I heard some people saying the Cherokee is their favorite sandwich- I will try that one the next time. The smoothies are also great - I get the green smoothie with kale and mango all the time. My wife likes the yogurt ones. The pic is the green kale with mango and the strawberry yogurt smoothies. We have tried a few of the frozen soups. They have been a little bland so you might need to add seasonings. You just can't go wrong at Parsley Denver! The staff is also super great! Enjoy!

In town & wanted a simple yet delicious healthy lunch. This place has so many options for vegetarians/vegans which I normal eat. But I ended up getting a turkey sandwich aka The Cherokee. It was fresh & filling. They ran out of ciabatta bread & had whole grain which was really good.

I got the mediterranean tuna salad and my boyfriend got the turkey roasted red pepper, and both were delicious. Also the carrot ginger apple juice was very tasty. Would definitely come back to try some other things!

Stopped here for lunch in a Thursday at 12:15. Place was busy but not crazy. Seating is a little sparse but a table opened up by the time our orders were ready. Friendly service. Moderate prices, maybe slightly high ($9 sandwiches, $30 total for two sandwiches and salad). There’s was easy free street parking within a block. Turkey & Brie fig sandwich on ciabatta was good, as was my friends without the turkey. She also got a salad to go.

One of my favorite spots around Denver to get a legitimately delicious smoothie and a sandwich or salad. Very friendly and professional staff, I definitely recommend the Mediterranean Tuna in either a salad or on that amazing bread! Gluten free and vegan options for those that want it.

This little sandwich & soup shop has a lot of healthy options. I ordered the Cherokee half sandwich (turkey cold cuts), but there are vegan varieties to choose from. I also ordered the triple-berry smoothie. The ladies who work there are professional, quick, and cute. The bathroom is clean & colorful. I'd eat here again when I'm next in town, but I must say that the food is on the high-price side.
