We tried several of the small plates and skipped the entrees to get a broader feel of the menu and they all brought something new to our meal. Everything about this place is understated. A glaring sign out front will not signal "you are here", but a small wooden one hangs in the window.
You enter looking over a small wall where the chefs are quietly working and creating the meal you are about to have. The drink menu features several cocktails that are barrel aged in house, along with wine and beer. Staff is knowledgeable and attentive while not overbearing and trying to rush more meal to turn the table over in a hurry.
Every element of this establishment is purposeful and not overdone.

Royce and Leanne and all of the staff here are super welcoming. This is a great date spot - it's intimate and cozy with rotating menu and art exhibitions. The menu is small but well rounded and features the finest seasonal ingredients. I've definitely tried some "exotic" dishes that have all surprised me with their flavors. veal sweetbreads, for example, and the finest octopus (not chewy at all) are examples. We are always impressed by the varied and unique flavors. It is fun to sit at the bar and watch the chefs at work, but it is also nice to face Colfax and see the energy & traffic blow by outside from a cozy, quiet retreat.
We had a corporate Christmas party here, reserved the entire restaurant. The staff were very attentive, the food was amazing, from the appetizers to the main courses and desert. The food on the pictures are the monkfish entree and the chocolate cake dessert. Highly recommend.! Parking was a bit tough, most people took a ride service. I found a spot 3 blocks away.
Really good food for sure. The marrow with toast is unmissable. The service felt genuinely friendly and neither me or my wife left anything on our plates for every dish we ordered. First place that impressed me in Denver since moving from NYC. The pics I posted were us already having tasted the food, so that wasn’t the true presentation of the dish. Classy cocktails plus a little list of fancy whiskies, craft beers and wine which was cool.The bathroom was clean which is a good sign of the restaurant's hygiene standards. If you live or are visiting in Denver, this place has top tasty food at a manageable price if you're into truly pleasing your tastebuds.

Some great stuff is happening all around the Blue Bird Theater. Had faith looking at the menu not picking, but going with the chef’s choice was going to be a great idea.
Loved everything here! It was hard to decide what we wanted so we ordered quite a bit and we were perfectly happy and satisfied. Cannot wait to go back!
The boiled peanuts you get at the start sets the tone for the entire meal. I've never had a bad flavor here, from sweetbreads to marrow, pork to fish, everything is thoughtfully crafted. The space is intimate and the chefs close.
Get ready for a Burst of Flavors....at “To The Wind Bistro”... starting with bone marrow to acorn squash to Gyoza to Pork Osso Bucco....all hitting your tastebuds one after another in a glorious cavalcade of delectability

First time here... Fantastic! Food is great. Each flavor in our meals was full and perfectly balanced. Parking is next to nil, but we parked one block into the neighborhood and had a nice 2 min walk in a nice neighborhood. Service was just as good. One of the best date nights we've had. Kuddos to the chefs and staff. We'll be back!
This is my favorite restaurant in Denver. The bone marrow is absolutely incredible, make sure to get a bone luge of specially selected Laws Whiskey to clean it out. The menu is always changing and never disappoints. The owner and chef Royce is welcoming and exceptionally talented. The staff and service is friendly and on point. Definitely a can't miss dining experience
Beautifully plated and delicious food! Chef Royce is awesome and his food speaks for itself (though he also makes great conversation!). We had Spanish octopus, cheddar gnocchi, and bone marrow. BEST gnocchi we've ever had. The octopus was delicious; light and flavorful. So was the bone marrow, which we had to get after we tried the first two dishes. It's a cozy place and very unpretentious despite the quality they provide (which I really appreciate). We just happened to notice this place while visiting Denver for a few days and I'm SO glad we came for our last meal here. It was easily our favorite restaurant that we visited in Denver. Please, PLEASE go if you get the chance!!
