I've eaten at Mira Sol once at Jak's out in Falcon and once at The Smiling Toad... I'm hooked on the tacos, they are the best I've had in the Springs! I love their fresh tortilla chips too... some are super crispy, some are just a little bit chewy (in the best way - yum!). My husband got the sopapilla burger, and the green chile was delicious. It has a good kick! Thanks, guys, we will definitely be back. =)
Sought out where and when Mira Sol was going to be on Tuesday. Then brought a friend with me from Beulah to Goat Patch Brewing Co. Bit of a drive, but soooooooo worth it. Best tacos I've ever had in my life and my friend loved the smothered nachos! Such great food and a great family! Great venue too! I highly recommend checking out Mira Sol at all of their locations.
Great food, food from scratch the green and red chilé is delish and it is vegetarian. The carne adovada is tender and amazing. They have one of the best burgers in Colorado Springs. Tacos are amazing too!
LOVE this food truck. Amazing selection and anything you get is delicious. I recommend the smothered stuffed sopapila! Their hot, fresh chips and salsa are the bee's knees to snack on while waiting on your meal. The family/owners of this truck are just the sweetest. Come check and support them out at different local breweries, especially Goatpatch!
Always the best food around. Many folks try to create good Mexican food in Colorado, but nobody gets it done like Mira Sol! Great service with awesome chile!!!! The Christmas enchiladas have to be the world's best!!!!

Went out on a limb...
Having NM roots, I've been fortunate enough to experience some of the best NM cuisine prepared by parents, aunts/uncles, grandparents, great aunts/uncles, and the gamut of family acquaintances/gatherings.
Suffice it to say, this is some friggin good NM-style cuisine. I had the adobada tacos, and I couldn't be happier with my choice.
Take it from me...you won't be disappointed.

Thank you for coming!! All of you were so kind and friendly. Your food was truly a pleasure to eat. The red sauce had just the perfect amount of heat. The meat had great seasoning. Those chips! Awesome.
I used them for a company catering function for 100+ people. They were amazing! Fresh prepped food, great taste and fantastic service! I would recommend them to anyone for parking outside a brewery or using them for a large scale event. They also have some of the best salsa I've ever had!
This food truck is legit! Everything tastes fresh and authentic. The chips are super addicting. We had the loaded nachos, beef tacos and sopapillas for dessert. This truck is 100% worth visiting at any of the terrific breweries they park at. Thank you, Apodaca Family!

Our favorite food truck in Colorado Springs hands town! Their chips and salsa are the best I’ve had anywhere, and their green chili is so tasty! Definitely a must try!
My company has had Mira Sol out twice for Food Truck Fridays, and they are easily the company favorite out of all the food trucks we have tried. These guys really know their stuff, and I have never tried anything from the menu that I didn't absolutely love! It's impossible to get anything less than delicious from Mira Sol!!
