Papi Queso - My first food truck experience in USA. Today noon, i came out of office to buy lunch take away & this food truck was just parked at the entrance of my office. I wanted to try foods from food truck from the day i reached US, but i happened to notice just today, So i made my mind 100% to try here.
Papi Queso serves mainly the grilled sandwiches & I went with Pig Mac($8), out of the few options listed on the menu. Packing was good & the staff was friendly & took around 10 minutes to prepare. Pig Mac is nothing but Mac'N'Cheese+Carolina Pulled Pork + Bourbon Onions on grilled bread slices. I was initially little disappointed to see just 2 slices of bread, but while having, i realized that it was heavy with huge quantity of pulled pork & macaroni. I have liked every bite of the sandwich, the pork & macaroni combination was very tastier. It was top notch preparation.
I would love to check other sandwiches also, when i get next chance. I would highly recommend this others as well.
I was able to try Papi Queso for the first time at Food Truck Friday, and the Charlotte food truck scene seems to be really starting to take off.
I ordered the Pig Mac which is pulled pork and Mac & cheese between two slices of grilled bread. The sandwich was really good. Both the Mac & Cheese and pulled pork would've been great on their own, and when compressed into a sandwich they were very good. The truck just uses plain white bread, but it gets perfectly toasted and ends up working very well because it doesn't overpower the other flavors.
While the Pig Mac was awesome, it wasn't very large for over $8, and it took almost 10 minutes to make which seemed like awhile (maybe because I was starving). The food was definitely top quality though!
Tried a leek and mushroom grilled cheese tonight and it was really wonderful!! The service was friendly ++. I can't wait to try more itms from their menu! I recommend this to anyone who like grilled cheese!!
Saw These Guys At Food Truck Friday! Try The Pig Mac! Its A Grilled Cheese Filled With Pulled Pork, MacNCheese & Caramelized Onions! It Was One Of The Best Grilled Cheese Sandwiches I've Ever Had!

Grilled Cheese .. Not you're Mother's. I like Food Trucks because the good ones go back to the basics and with limited resources, try to come up with something unique to set themselves out from the crowd. I mean, what else can you do in such a limited space, to create something new and different with crowd appeal.
This one manages to pull that off and pull it off with flair.
Went to a Food Truck Rally in Charlotte last Saturday and this was one of the Food Trucks there. They had recently gotten a very good write up in the local press and it looked interesting enought to give them a try. Glad I did.
Basic premise is a Grilled Cheese Sandwich. What is a more basic comfort food that a Grilled Cheese but at the same time, has less imagination.
These guys or girls and I'm not sure which, push it to the limit and come up with a great product. I had a Grilled Cheese with Leeks Comfit and Mushrooms. Rich,moist and savory, it was probably one of the best grilled cheese sandwiches I have ever had. A little imagination goes a long way.
It's a mobile food truck and spends a large amount of it's time in NoDa or Plaza Midwood so if you see it, you might want to consider giving it a try.
Papi Queso Truck can often be found at Food Truck Fridays in South End, and is always a popular choice for dinner. One of my favorite things to do is happy hour at Common Market and then pop over for a grilled cheese. I’ve had the chance to try the Big Cheesy (which was yummy), and the truffle kettle chips. I also love any place that allows you to add bacon to any sandwich for only $2 (how is that a bad thing? it’s definitely not). But get there early, Food Truck Friday has become super popular and the trucks often run out of their goodies.
...we passed the Papi Queso truck while it was heading down Central. It didn’t even take a second for us to look at each other and know a gourmet grilled cheese was just what we needed. We looked up their facebook , followed them on twitter while we were slowly stalking them on the way towards Uptown. Once they stopped we looked over the extensive grilled cheese menu and ordered the “Pig Mac”, the “French Onion” and some Tomato & Tarragon Soup. Given the miserable weather we opted for taking our grub back home and enjoying it while finishing off a season of Dexter . With sandwich bliss in hand we turned on Dexter and sank our teeth into our grilled cheese’s. Both sandwiches were delicious but one sandwich stood above the other… the PIG MAC! Papi Queso is always great - I’ve never had a bad meal and truly appreciate the consistency. I sit at the tables outside when I visit Optimist but since it was cold and I was by myself I sat at the Papi Queso counter today. Everyone working was great but I wanted to give a shoutout to Amy who was extremely attentive, friendly, and working hard to keep the orders moving along during the lunch rush. They were experiencing problems with their online ordering system and she kept her cool/stayed positive while navigating the problem and dealing with customers whose orders were never received due to the system error. Can’t wait to come back. :)
The best grilled cheesesteak I’ve ever had! Wow! Perfectly toasted thin sliced bread, tender grilled beef, melted provolone cheese! The flavor and texture was amazing! Also try their Tomato soup, it was delicious! And French Fries were veryyyyy good!
I had a mommy baby date with my daughter here. I guess the owner was behind the bar. Such an awesome personality. The whole staff was amazing. And the food was so good for just being a sandwich shop. I stick by forever statement. Amazing service makes great food taste amazing (dont steal my quote!!😜)
I was wanting something that was not typically something I would eat, and Papi Queso had a variety of grilled cheeses that piqued my interest. I ended up choosing the Pig Mac, which has pulled pork and mac & cheese. The sandwich was really good, and it had a unique flavor to it that I enjoyed. The person taking our order was super nice, and coming here was a pleasant experience all around.
Really good grilled unique cheese sandwiches here. I was able to order ahead through Google ChowNow and my order was ready within 10 minutes. I tried the Pig Mac. It was hot and fresh and decadent. Definitely worth a try.
Papi Queso is a Charlotte staple. I can't believe I haven't reviewed it before.
The Pig Mac is my go to favorite, but I forced myself to try something new on my last visit. I got the Texas Cheesesteak which was very good. I can't say I liked it more than the Pig Mac, but you really can't go wrong with any sandwich here.
I also tried my friend's cheese curds which were way too salty for my liking.
If you're at Optimist Hall, you can't go wrong with grilled cheese from here.
Food was amazing! Service was amazing! Only complaint is that they advertise a “lunch special” that includes sandwich, side, and drink - this is not a special and rather just regularly priced! Spent $24 (not including tip) on lunch today for 1.
My girlfriend and I got this to split, but she ended up stealing my half because it was so good. It was really tasty.
Edit: just had the pressed spaghetti sandwich as well, that was surprisingly tasty and had a good familiar taste that was comforting. The garlic tots were a hit too.
While exploring Optimist Hall we were told by another vendor to fry the Froze from here! We were soooo glad that we did. It was cold, refreshing, and definitely had a heavy pour. We plan to go back to try some of the food, but definitely recommend getting the Froze. Not to mention the customer service was nothing like we have ever experienced. She was soo nice, attentive, and made great recommendations for food when we return.
Located inside of Optimist Hall, serving different takes on grilled cheese. I put a note in my phone to try Papi Queso if I was in Charlotte, and I’m glad I did. I split the Pig Mac, Mushroom Gruyère, and Garlic Parmesan Tots with some friends. Everything was great, but the standout was the Mushroom Gruyère. I’m a mushroom lover and this blew my mind. Paired with the truffle sauce, I was on cloud 9. I’ll come back and try other sandwiches , but will struggle (and likely fail) not to get this one again.
