Food was genuinely the worst I have ever had in France and the service was shocking. When I complained and commented that I wouldn't expect to pay for elements of the food, the owner threated to get his friends to drown me in the harbour! He also said that in Corsica everyone knows each other and that he knew all the police... Based on what I saw of this backward little rock, I wouldn't be surprised if what he said was true.
Owner had a serious personality disorder and significant consideration should be given to his sectioning.

Congratulations to the chef and the staff. We got the “menu inspiration” (4 dishes: starter, fish, meat, and dessert) and everything was amazing. Great service. Fair price. We hope to be back soon.

An exceptional "cuisine" light and tasty really worth the star but the service is a bit clumsy clearly not used to high end customers and the wine list is almost non existent (only local wines only of the current vintage). Finally portions are very small, even smaller than nouvelle cuisine dictates and there is no degustation proposed nor the menu is ample enough to allow a several course dinner. If they keep this quality in the kitchen and with the help of Michelin which will bring them customers they can learn and become a good restaurant. I do hope so Saint Florent really deserves a high end restaurant

Went for: romantic dinner
Ate: oysters, ceviche, fish and muscat gourmand dessert with small bottle of wine
Good: food was generally okay. The dishes were well presented. Service was friendly. Nice views.
Not so good: it took a bit long for the starter to arrive.
The price: 100€ for a fish for 2...you'd expect more.
They also have good lunch menu offers (except on the weekend).
If you can afford, go for it. If it's a once in a lifetime experience, don't look for it here. We enjoyed it, but would have been "blown away" for 25% lower cost.

tl;dr: Posh setting, bad food.
NOTE: To mellow down I waited a week before posting this rather bad review.
Our grilled fresh fish was highly mistreated during filleting. We got sad piles of fish meat full of bones. Our remark that the fish contained lots of bones -supported by evidence- was brushed away with a rather unprofessional smile.
When I pay EUR 103 for 1kg of fish, two small glasses of sparkling wine and a bottle of water I'd expect the fish to be filleted adequately. Or at least to be given the opportunity to fillet it myself.
We got friendly with the couple on the table besides ours. Their stakes were full of sinew, looked awful and tasted accordingly.
