If you've never tried Southwestern style carne seca beef jerky, you are in for a treat. It is thin, light and delicate. It almost melts on your tongue. This is so totally unlike any big-box store jerky you've had. It's not wet and sticky in the bag, and it doesn't need refrigeration after opening.
Instead it is the driest, lightest delicate jerky you've ever tried. Vigil's uses only the best beef in their products to maintain the melt-in-your-mouth quality. They have many "flavors" but you can't do better than just pure natural carne seca as far as I'm concerned.
If you're a carb watcher (and who isn't these days) you'll notice Vigil's jerky contains very little carbohydrates, unlike the wet sticky jerky products which are soaked in sugars.

I absolutely loveeeeeeee this jerky. I live all the way in Florida and have it shipped regularly. I can’t stand the chewy gas station jerky. If you like that super dehydrated, yet melt in you mouth kind of jerky, this my friends is the one for you!
The best carne seca if I don’t make it myself. Teriyaki and Christmas are so so good!! Lemon pepper could be better. I didn’t get much of a lemon flavor which I was hoping for. The store had a lot of stock so if you need to stick up for a camping trip or a concert like we did, there will be plenty!
Shipped a box of jerky to my son in Virginia. He said, "They don't have this type of jerky out in Virginia."

Paper thing beef jerky with just the right amount of flavor. Nice and crisp, just the way New Mexican Jerky should be.
Priced at $20 per half pound, which seems to be the going rate for good jerky.
Green Chile Jerky is super tasty, but super mild. Would make the perfect gift for those.put of town friends who are sensitive to heat.

The only downside to this hidden gem is the fact that the U-haul signs throw you off a bit. Other than that the customer service is great, the prices are great! If you like thin jerky, Vigil's is the spot to go to! Plan on making another trip to Vigil's Beef Jerky soon! P.S... small tip, try perfecting a "Lime - Salt" jerky flavor, and keep the fat on it! 😍 other than that great flavors of jerky! 😍
I honestly enjoyed the beef jerky. I had been looking for this type of jerky for quite some time and happened upon this brand. I purchased the green chile and red chile flavors, and will say they are fantastic. :0) Had a chance to speak with them personally and they were professional and aim to keep their customers happy, which is a lost art nowadays. I will be ordering again.

I just got back home to Washington State after a 2 1/2 month road trip. While in Albuquerque I stopped at Costco for a resupply. Beef Jerky was on my list. A nice lady was giving out samples. I tried the red chile and lemon pepper recipes. At first I was a little surprised by how dry it was. But after savoring it for 30 seconds, the flavor hit me like a stampede! I used it in many camp recipes to add beef and spice to beans and rice. Really easy to just crush it; as you would many other spices. One evening while enjoying a beer and gazing at the stars, I slipped a piece of the lemon pepper jerky in my mouth and followed it up with some chili flavored pistachios. The flavor combo was INCREDIBLE! That deliciousness haunted me the rest of my road trip. After unloading the truck, the very next thing was to order a bunch online. I can't wait to try it in a spice grinder and add it to various dishes or, indulge myself with a whole strip by itself.
I used to live in Albuquerque and had easy access to their Jerky. I moved to WA and was able to still great service, great products and pricing. Look forward to keep enjoying their Jerky. Shipping was reasonable and FAST.
