Oh man, posting these pictures makes me want to go back right now! This place is fun. The location is interesting and it's an open-front store - almost made me feel like we were in a nicer-than-Wichita city, like our favorite city Chicago. But on to the ice cream. You pick your flavors and add-ins, they mix it all together, then smear it onto a surface that, I'm assuming, is 8° (clever, clever, huh?). After it's flat, they scrape it up into rolls and stand it up in a cup, topping it decoratively. I think it gives the ice cream an interesting texture so that's fun too. We got Pink Lady and French Toast.

Horrible signage. Awful organization when you order. No idea where the line was. Waited behind a large group who was only waiting on their ice cream but appeared in line. When they call order numbers, they yell loudly and hold their hands by their faces and the guy touched his face and DID NOT change his gloves before going back to preparing ice cream. Didn't seem to care that I have food allergies. They don't know their product to know what it's made with and didn't offer to go look. Horrible customer service. $6 seems expensive for what you get. The ice cream was very bland. Pretty presentation is the only good thing I have to say. 10/10 would not go back and do not recommend.

Union Station is undergoing a transformation right now, and one of the early improvements was the addition of restaurant stall spaces in the front plaza. This rolled ice cream shop is one of the occupants, and they offer up not only delicious ice cream concoctions, but also a good show. They prepare your order in front of you, pouring cream over a cold metal surface, sprinkling in the mix-ins of your choosing and then working their magic with two scrapers to create beautiful curls of deliciousness. Be prepared for a bit of a wait.

I love this place so much! My girlfriend and I surely do enjoy going here on a hot summer day and getting some of there very delicious ice cream. We wouldn’t want to get are tasty treats anywhere else. Staff is fun and friendly and the service is exceptional. Highly recommend to anyone. Very fun and kid friendly. Thanks 8 below!!!

My family and I went to 8 Below in Derby for the first time ever on Mothersday. While they were understaffed, and it took about 40 minutes to get our order, the staff was top notch and the desert was worth the wait. During our wait, multiple staff members chatted with my 2 young children while they were quickly working through their orders. They were very friendly and caring and it made my kids day to have the staff talk with them and explain their process and things they were making. You don't find customer service like this anywhere! We will absolutely be returning!

Drove in from Salina to get a bite! Great area, super friendly staff and very clean. Line wasn't too bad at all and we did have to wait for our treat for around 20 minutes but it's worth it! Ice cream is made right in front of you and simply to die for! Would drive back again!

My granddaughter and I will definitely return.... was excellent ice cream!!! We both were very happy with the way it tasted as well � everyone was friendly....it was really neat watching how they made it and how they roll the ice cream....just a very cool place!

Super neat dessert, very delicious. Super long wait because the process of rolling the ice cream is not a quick one. But totally worth it. No indoor seating and limited outdoor seating so be prepared to stand or sit around the area on steps etc.
