Every dish we had there was yummy. The flavor in each dish flowed together really well. The staff was attentive and knowledgeable. And the chef was very friendly. He even brought us this rum cherry tart that wasn't on the menu and was amaze balls. I probably could have eaten the whole thing. Too bad I had to share. Nothing is done in a hurry so be ready to take your time and enjoy the meal. Portions are on the smaller side so order more and share.

Love this place! Delicious personalized cocktails, delightful staff, artful and tasty small dishes, and a relaxing ambience. Recommend ordering the chef's tasting menu (chef tailored it for my seafood allergy) or ordering a few dishes a la carte (friend loved his)...I loved the ragu and lamb. Chef Carsberg (James Beard Award-winning) came to chat after dinner. So worth it...will be back! :-)

Wow, this place is simply exquisite! Amazing food and excellent service from a modest chef in an open Italian kitchen. A must visit in Seattle, but the bill is not for the faint of heart... Don't skip on the salumi with the Parmesan ice cream!

Currently, this place is a hidden gem. I am from out of town, and suspect “hidden” status will change soon. I was lucky enough to find this place by accident while visiting, and everything I had was spectacular (burrata with matsutake mushroom, duck egg on a waffle, black cod on pine paper [spectacular], short rib in Barolo). Employees seem not like employees, but instead great enthusiasts of Chef Scott Carsberg. Me too now. I have emailed everyone I know in Seattle ...

Wow this place is amazing! We got about 9 different plates total between the two of us. We were full. Although the portions are small they are packed with flavor and delicious. I'm a picky eater and I loved everything we had. We ordered the tasting menu plus 2 or 3 additional plates. Not a cheap restaurant by any means but worth every penny. We had reservations on a Friday evening around 7pm and it was very busy so defiantly make reservations. Everything is so fresh even our drinks. I got mimosa with Prosecco and the orange juice was fresh squeezed just for my drink! So impressed! Great spot for date nights, business meetings, or just a dinner out with friends!

While I thoroughly enjoyed our meal, the place is rather expensive and I think some of the dishes or the redundant. I felt that three of our dishes were under seasoned but still good. We were nearing the end of our $700 meal and realize that we were still quite hungry due to the portion sizes being very small, so we had asked for some table bread which they were happy to provide at $8 on top of the cost for the chefs choice 9 course meal. $30 per bottle corkage fee is at the very top of the Spectrum as far as what restaurants charge for corkage.

One of my top 5 best dining experiences. We had the chefs tasting menu and I would highly recommend this. Dinner was 11 courses and was a 3 hour experience. Great staff with one friendly face after another.

Absolutely exquisite. Every detail of this restaurant is incredibly well thought out -- from the design of the restaurant itself, to the amazing staff and unforgettable food. You can taste just how much care Chef Carsberg puts in his food in every bite. Bisato redefines fine dining. Perfect for any occasion -- from a weekend dinner out to a weeknight drink at the bar with light bites.

Bisato is by far the most refined restaurant in Seattle. The Italian dishes are cooked and presented with artistic and modern twist. If you are looking for spaghetti and meat ball, you will not find it here, but there is an amazing black truffle embedded pasta sheet with creamy fonduta cheese sauce. Also, I was amazed how Chef Carsberg extracted intense flavors from even the humblest vegetables. The open kitchen is set up like a laboratory; spacious, and emasculate as the heart of the restaurant right next to the dining area where you can view the chefs working diligently on their craft. There are many options to the menu; tasting and a la carte. There is a personal touch and care to all dishes. The atmosphere is casual and yet formal. It is what you want to be. The dining room is not cramped and beautifully designed in an understated refinement. It is one place in Seattle where you can take your important guests and not be embarrassed by the food or the service!

Great hospitality by the owner. This is the first time I've had italian food that wasn't overpowering and didn't leave me overly full. The meal was very light and very filling at the same time. Ambiance is great, and it's affordable for a nice night out. Would recommend this for those who enjoy italian food but don't like the excessiveness of most italian restaurants. This is italian food distilled down to the flavor and it's fantastic.

My wife spotted this eatery recently as we strolled in the Pioneer Square area looking for a place to eat. I require a kitchen that can make a meal from scratch, with no salt or very little salt (I’ll get sick otherwise). She saw the white linens through the window and beckoned to me. Bisato, still hidden with little or no signage out in front, did the job beautifully (Bisato is the name of a Venetian canal or river). A well-dressed man in a black suit, self-described as part owner, greeted us that day and walked us to a table, assuring us the chef could comply with my needs. Little did we know that the capocuoco (head chef) and this relatively new restaurant were already legendary among the local food cognoscenti, to which we do not belong. We ordered with care and were amazed at the luscious squash velouté (fancy word for a very fine soup) and the exquisitely prepared melt-in-your-mouth halibut brought to our table—all with little or no salt, but delicately spiced, nevertheless. The only complaint I have is the absence of a good piece of bread. I didn’t much care for what they served. A lovely young woman dressed in what I took to be Italian provincial attire served us with great care. The service was tops. We even got a little tour of the kitchen! We’re retirees and so we watch our purse. The bill was more than we usually pay, but it was worth it. We’ll go back.

Thank you for choosing Pioneer Square to open this Jewel!! This was one of the most exceptional meals I have had in Seattle. If you consider yourself a "foodie" then I would highly recommend this restaurant . Everything from the fine service and beautiful setting further enhanced our wounderful experience!! Also good value considering the quality of the meal that wa had! A must try!!!

Owner and Exec Chef oversaw the work of a very open kitchen showcasing the thoughtful preparation that went into our meal. We are light eaters. Radicchio salads w/ balsamic dressing, gnocchi, pasta sheet spread with black truffles, lemon tart. Service was informed, proper, and unobtrusive. As the sun set, the dining room provided a neutral envelope for our meal food as it came to table. One limitation: no decaf espresso. Bisato is an exciting addition to the downtown Pioneer Sq neighborhood!

One of the best in Seattle! We dined years ago and both Lampreia and the original Bisato. Last week we experienced the new incarnation---in short: marvelous! The food is sublime, the presentation exquisite and the service excellent. The century old building that houses Bisato is beautiful to behold and offers a warm intimate setting. We will be back!

This is fine dining. There is consideration for every detail. Service is aware and personal without being intrusive. Courses are designed around the quality of the product. Carsberg is the most underrated chef in Seattle and Bisato deserves a star.

Great place, food was amazing and staff was kind/helpful. Portions are small but so flavorful that it takes you just as long to eat as if they were massive. Each bite is an experience in itself.
