Tasting Notes: cranberry, baker's chocolate, molasses
It takes a lot of cupping to discern a great Sumatra from a decent one and we’re confident we’ve done it here. This coffee is earthy, deep, complex and full bodied. As all great Sumatrans, this one is sweet, spicy and creamy. Cranberry, baker's chocolate and molasses in the cup.
About the Coffee
The coffees of Sumatra capture the essence of the wild jungle of this tropical Indonesian paradise. Sumatran beans are a beautiful deep blue-green color with the appearance of jade.
Small landowners grown their coffee in tiny plots scattered over high terraced plateaus of clay. The coffee grows under full sun exposure without the addition of chemical fertilizers or pest control. The farmers will then remove the skin of the coffee cherries with hand-operated backyard milling machines and ferment the pulp covered beans overnight. They are then hand washed in the morning and dried on clay or canvas in the farmer’s yards.
This is followed by parchment removal and a second drying. The beans will then be hand sorted to remove sticks, stones and visible defects. The Permata is sorted again at the port of Medan before shipping.
The combination of soil, climate and traditional processing methods are what make this one of our favorite origins to cup. We’re never sure what we’ll experience, but it’s always a nice surprise. We’re happy to offer you one of the truly unique coffees in the world.

Scarlet Espresso
Tasting Notes: dark chocolate, hazelnut, coconut & crème brûlée
This is what we believe espresso should taste like. Even when tasting some of the best espressos out there, we can’t help contorting our faces when we hit that inevitable bitterness/sourness. The Scarlet offers a lush sweetness throughout. Intense dark, slightly spicy cocoa notes blend perfectly with hazelnut and butterscotch as the thick crema coats your mouth. The body offers hints of coconut and a lingering crème brûlée finish, smooth to the very end.
About the Coffee
A blend of two different coffees, this is the coffee we have spent the most time perfecting. Roasting and cupping different combinations and variations (exhausting work right?) we were one day blessed with what came to be know as the Scarlet. Blends perfectly in milk, and it has no equal as a straight shot or a macchiato. Enjoy.

A blend that is sure to please everyone. We combine South American, African and Indonesian coffees in a harmonious cup that is rich and complex. Hints of cocoa, praline, toasted hazelnut and a smooth buttery finish that is sweet to the very end. Peace!

This blend is inspired by our home of Salem, MA which in turn was named after the Hebrew word for 'Peace'. We have selected some of our favorite coffees from each major coffee growing region and combined them into one of the most balanced, pleasant coffees you will ever taste.

Black Derby
Tasting Notes: dark chocolate, maple, black pepper
Our darkest roast. A French Roast blend of Indonesian and African coffees. The flavor profile is spicy, smokey with dark chocolate undertones. Heavy bodied, low acidity with a dark maple-like finish.
About the Coffee
Many will tell you dark roasts are "burnt". We may be a bit old school but we think the right coffee, in the right hands can shine as a dark roast. This is a bold blend of Sumatra and Kenya for those who appreciate coffee the way it used to be. Great on its own, the Black Derby also shines with any proportion of milk or cream.

Guatemala Huehuetenango - El Injertal
Tasting Notes: cherry, milk chocolate, vanilla, plum
This is one of our favorite coffees of the year. Guatemalans are renowned for their high quality and the El Injertal does not disappoint. A highly sweet offering with cherry and milk chocolate in the first sip & hints of vanilla and plum followed by a smooth honey finish. Balanced acidity with a medium body make this the perfect breakfast coffee.
About the Coffee
Finca El Injertal was founded in the 1930’s by Jose Olivio Chavez. The farm sits on over 200 acres of land in the northwestern Guatemalan province of Huehuetenango. It is located near several springs that provide water during the dry season as well as the energy to power the coffee mill. Coffee is produced on 173 acres while 32 acres are a forest preserve where native species of trees are protected to provide refuge for wildlife. Certified by the Rainforest Alliance, the plantation is completely covered with shade trees that are an abundant source of organic matter for fertilization and an aid to prevent soil erosion. Today Finca El Injertal is run by Jose Olivio’s grandson, Jose Alejandro Solis Chavez, and has been producing high quality coffee for three generations.

Ethiopia Harrar - Deep Blue
Tasting Notes:
This Ethiopia displays an intense, complex aroma: red wine, stone fruit, a hint of roses. Low acidity, full, buttery mouthfeel. A 'berry bomb'.
About the Coffee
Harrar is one of the world's oldest and most traditional coffees. As it has been for centuries, it is hand picked and spread in the sun to allow the beans to dry inside the fruit. This way of processing is commonly referred to as the “natural” or “dry” process.
