Wine
WHITE: Soif Du Mal Blanc (Muscat, Macabeu) Les Foulards Rouge, Roussillon, France '19
In recent vintages, the cépage has heavily relied on the trio of Muscat Petit Grains, Muscat Alexandrie and Macabeu to provide an impressive, layered frame that is mouth-coating and toned. This year relied solely on the latter two and the result is a more nuanced expression with spectacular longevity after opening. Zesty and fresh, with notes of yuzu-kosho salt, mint, and anise, the wine needs time to open up. As it does, the wine delves into an expression similar to amontillado sherry - honeyed but savory and herbaceous with a high-toned edge that glosses over the palate. The intrigue of this wine can only be discovered over hours or days!
a zesty little number made from Moscatel de Alejandria. Despite maceration only lasting a day, the intrinsic nature of muscat joyfully announces itself on the nose. The scent of elderflower and olive blossom are beguiling; a touch of lychee follows with a tinge of salinity that evidences the vines proximity to the mediterranean. The perlage is fine but assertive, as delicate as Pellegrino bubbles though far longer lived. The chalky dryness pleasurably balances the fruity nature and accompanies the spunky effervescence to deliver a high-toned, refreshing pet-nat.
Like a refreshing ginger beer with a flirtatious tropical note. Zesty and dry with punchy notes of pineapple and grapefruit! Refreshing bubbles tingle the palate!

ROSÉ: Sisi (Macabeo, Carignan) - Jordi Llorens, Cataluñya, Spain ’18
the wine mimics a tavel rose in looks and aromatics: a translucent ruby color that shines as bright as a nebula, coyly expressing red currants, rose hips, and blood oranges. It is dynamically mouth-filling - succulently fleshy and ripe - and eddies into a unique partnership of ensconsed fruity intensity and snappy elasticity. Sisi pulls you into the wine as well, so that every sip is like discovering a new sense. One cannot help but feel Jordi’s wines are inextricable extensions of himself, the land, and the drinker.

RED: Bim (Grenache, Cinsault, Mourvèdre) Sebastién Chatillon, Ardèche, France ’17
One of the quirky, addictive wines from the former somm of chateaubriand. Gushing with feral dark elderberries and oak moss interwoven with bittersweet chocolate. This wine packs a punch but keeps it fresh.
The proximity of the controvento estate to the adriatic coast is delightfully evident in the alto mare; from its luminescent orange hue to its briny and somewhat exotic nose. Two days of skin contact serve to only enhance the Mediterranean character of the wine - imbuing a salty crunch countered with a soft chalkiness. Chamomile, tangerine and fleur de sel are boosted by an endearing acidity that lingers and makes this wine even more enjoyable as it warms up.
Light and airy but retains an intense, somewhat feral undertones. Umeboshi, rhubarb, and sage emerge with a bright, vivacious tanginess that makes your mouth water.

Refreshing lucidity with hints of kiwi, lime sherbet and lemon ice idly glide across the palate. The diminutive perliage sparks waves of unfettered joy with tiny beads of effervescence. The soft mousse adds some character and mouthfeel to the playful citrus and garrigue notes.
A saline and high-toned rosé, with a bracing and refreshing acidity. Strawberries, red currants and sea salt. Fresh, buoyant and lively with a vibrant tanginess!
A shorter maceration of moscato and ottonese; each enhancing the other to provide a dynamic partnership. It is both savory and aromatic, intuitively genuine in its lighthearted and pleasant nature. There is a galvanic touch that reigns in the salacious nature of moscato so that it remains vigorously refreshing. Peach, pomelo and apricot marmalade!

WHITE: Les Quarterons (Sauvignon Blanc) Sébastien Riffault, Sancerre, Loire, France '18
First step of wines meant to bridge the gap between conventional Sancerre and Sebastien’s more esoteric cuvées. The use of botrytised fruit is minimal but softens the wine and creates an unusual sense of plushness not ordinarily felt in Sauvignon Blanc from this region. Honeyed with notes of pineapple and mandarin orange. The touch of sweetness here is kept in check by the nervy backbone of acidity. Freaky and unorthodox but oh so good

WHITE: Luna Nueva (Blend) Kindeli, Nelson, New Zealand '19
A sublime and seductive blend of Viognier, Pinot Blanc & Gris, and Sauvignon Blanc. Partial skin contact and amphora aging leads to a beguiling departure from the ubiquitous New Zealand style. Like a succulent luau of grilled pineapples, honeysuckle, passionfruit and herbs. A subtle tingle of spritz accompanied by an energizing, gooseberry-like acidity. Notes of sun-dried meadow hay, quartz and verdant underbrush are carried through by the balminess of the Viognier. A bass note of primal clay lends some muscle to the wine while it glides across your tongue with ease.
