The beef chow fun was reasonably tasty, but needed extra soy sauce which would have normally been easy to get except the level of service was not too great as I never had a server come back after the meal was delivered until the check came.

VERY GOOD DISHES SERVED HERE. FIRST TIME HERE AND ITS WAS EXCELLENT. EVERY PLACE IS DIFFERENT WE ORDERED THE SALT PEPPER PORK. IT WAS TENDER AND VERY GOOD.

Since my previous review 8 months ago (below), service has noticeably improved. The servers and staff seemed to be a different group than we experienced in the past. Our Seafood hotpot was great as usual. The large size gives you a split pot so you can use 2 different broths (we selected our usual: spicy and special herb). We added Singapore Noodles, which are also very good. This combination is plenty for 3 adults.
The new g-maps rating categories are split between food, service and atmosphere. I gave 5-stars for the food, and an improved 4-star rating for the service. I gave the atmosphere 3-stars because the restaurant is situated in a busy casino area with noisy slot machines in direct sight of the dining room. That said, the atmosphere isn't the reason you would come here. The hotpot is the main draw.

We have been going to the Noodle Exchange for 12+ years. The hotpot is always good. We usually get the Seafood, additional vegetable with spicy broth. My rating is downgraded due to the deteriorating service. With the exception of a few decent servers in the past, the customer service was never great, but the current staff have no interpersonal skills and operate in a robotic manner. Not a bit of friendliness or personality. Once they drop off your food, they will never return to your table unless you waive them down. And even then, we typically need to ask twice as the first request gets forgotten immediately when they walk away. On our last visit, they forgot the drinks (2 requests to get that handled), multiple requests to get broth, etc. etc.
In the spirit of fairness, they could be understaffed, which may explain why some of the staff seem to be running on the floor.
If so, this is a management failure. It does not present a good customer experience to see the servers in a constant state of panic... and it still doesn't excuse the lack of followup or monotone responses.
Again, if customer service doesn't matter to you, then you should be fine.

Nice place tucked away inside the casino. Good food, the lamb and beef were good quality. It can get a little busy, so there might be a wait for a seat at times.

The food was absolutely delicious they gave you very good portions. Service was very good that atmosphere was okay didn't like the smell of the fish too much but other than that it was pretty good.

This is one of my go to spots for Beef Brisket Won Ton Min. If you want something as close to Honk Kong style noodles as possible then you found the right place. As for service they are all nice but when I went there I was having lunch on my own. There were plenty of open seats but it took them a while to seat me. While I understand that it was during lunch hour I think that it could have been done a little more swiftly. Other than that I will keep coming back as long as the quality of the food stays the same if not better.

Shimp-Wonton-noodle soup & shabu-shabu hot pots were delicious and affordable. The service staff was very attentive & pleasant 😀👍.
This restaurant is located inside the Gold Coast Casino ... and opens out towards the casino floor. It can be very busy at times ⏲️.

Def one of the better, more authentic places in Vegas. The Sichuan hot pot really needed to be about three times spicier and have more of the Sichuan peppercorns. But the restaurant opens to the casino floor, they don't want to smoke out everyone. I get it. Forgivable.
Usually i get the lamb hot pot but for whatever reason I got tofu today. Only two itty bitty pieces of tofu and an entire bag worth of spinach and cabbage. It was spilling everywhere.
