I stopped here for some appetizers before my flight and I enjoyed quick and friendly service. The bartender was friendly and helpful with recommendations. I enjoyed trying a few different small menu items and would love to return to try more.

This place is located at the Aria Hotel in Vegas. The best changlia I've ever had.Tomatoes matched the base appetizer so well, and the octopus was really soft and the temples were properly forgotten, so it went well with the sauce. It was a trip with the groom, so I ate lightly so I didn't feel burdened, but they were both satisfactory meals like course meals.And the butter I asked for smelled so good. I want to drink Changlia while writing this

Really enjoyed the food. Service could've been better. Our waiter tried to push our group to try a few suggestions of his, which we did. But once he suggested another dish, and we denied, he started acting very rudely. But other than that, very enjoyable food and atmosphere.

The quality of food was amazing. We had the shrimp ceviche, octopus/potato, tuna cones, and mixed paella. Finished off with the churros and chocolate. All of them were amazing. Price was high, but mostly because we ordered way too much food.

It was a quick lunch but we really enjoyed it! Beef was perfectly medium rare as I requested and their red wine and mushroom sauce was amazing. French fries was also good I never had fried eggs with it but it was pretty good! Their chorizo was yummy too. I would like to try other things next time!

The tapas here were 🔥. We had great service and live music. We ordered: 1. Pon con tomate - the bread had a great texture, and the crushed tomatoes on top were delicious. (5/5 🌟) 2.Yellow fin tuna - this came out of a can of greatness. The tuna was delicious, and the paired bread rounded this dish out as one of my favorites. (7/5 🌟) 3. Mushroom risotto - this dish was executed well, and I wanted to love. It was good, but it wasn't a standout. (4/5 🌟) 4. Brava potatoes - the potatoes were tasty but weren't a star of the evening. (4/5 🌟) 5. Chorizo - the accompanying mashed potatoes were executed well. The chorizo was seasoned perfectly and had a great texture. (5/5 🌟) 6. Pisto manchego - this dish was 🔥 and the paired bread was delicious. It was one of my favorites of the night. (7/5 🌟) 7. Sardines - I dont like sardines, but the group enjoyed these. (5/5 🌟 ) 8. Churros - these were prepared well, and the accompanying chocolate sauce was phenomenal. (7/5 🌟) 9. Almond cake - this was a unique desert with great flavors. I would order again as it was a highlight. (7/5 🌟) I would recommend a visit here and don't skip the dessert dishes they were amazing.

Restaurant with a nice setting and great food. Service is impeccable. Portions are generous. I highly recommend the perfectly seared scallops sitting on the apple butter, it was delicious. The airline chicken breast was the special of the day and it was juicy but flavor wise, there is nothing out of the ordinary. The plate came out one at a time, since it is tapas I would have preferred if they came out all at once.

I went for a solo weekday lunch meal. There is a lunch set where one gets a little tray of marcona almonds, marinated olives and pickled peppers, and picks appetizer, main and dessert for $39 (some items have surcharges). It is a pretty good deal compared to the a la carte prices. The food was delicious, especially the marinated olives, the oysters, and the churros. Minor knock on the paella, which was a bit mushy with no crusty bits. But I have high expectations for paella, and to be fair, there was a generous (and well cooked) amount of protein included so ymmv 🤷‍♀️ I'd happily visit again next time I am in town. Please consider including the octopus as lunch menu option!

We had the bacon wrapped dates and the chicken croquettes. The dates were fantastic, chewy, creamy, and not date flavor forward. If you don't like dates, I recommend you still give these a shot because you couldn't even tell. Personally, I love dates, so I was slightly disappointed they didn't have more date flavor. The chicken croquettes are served with aioli... the texture was nice but lacked flavor. If you enjoy Cuban croquettes, these are completely different. They are made with ground chicken and not a chicken paste. Little salt out of the fryer and maybe a little citrus to brighten up the density of the chicken would help. As for the service, we sat at the bar and the bartender was very attentive and fast. I'd go back to taste more of the menu.

I tried their mushroom risotto and crispy calamari, and both were amazing. Honestly, I did not expect their food to be good, since it was located at the entrance of the Aria lobby, and not as fancy and private as other restaurants around. The sangrias were not bad at all, but I found it to be little expensive for a glass which was half filled with ice.

Julian Serrano at Aria is a gastronomic delight in the heart of the Vegas Strip. The ambiance sets a refined tone, making it a perfect spot for both casual gatherings and special occasions. But the real star of our visits was bartender Brian Majano. His mixology skills paired with unparalleled customer service made our experience truly memorable!

We ordered brava potatoes, pulpo a la gallega, seared scallops and paella mixta. Everything was delicious. The pulpo was some of the best I’ve ever had. The only disappointment was the service. We had to ask for our waters to be refilled. The waiter spent 10 minutes trying to get a date at another table. That’s the only reason for 4 stars. I will definitely be coming back though to try other items on the menu.

The food is top notch but the decor has become more of a business lunch happy hour kind of spot for conferences and doesn't give the same fine dining vibe that I'm looking for on romantic dates. But the food is absolutely top notch. The paella is so creamy in texture yet with the char and crunch. Everything was fantastic. In the Aria I know they cater to many audiences. But I hope they don't lose the spirit of being a dining focused place first. Having sports on the TVs above the bar seating just screams of a casual place attracting passerby instead of a fine dining spot to compete with the best chefs in the world on the strip.

Great restaurant for Spanish cuisine but a bit expensive. The serrano ham and the cheese tapa were great but soft bread rather than toast would have been better. Paella was excellent and very tasty. Wines by the glass were poured at the table, very classy.

This restaurant was a serendipitous discovery. A perfect evening on our first trip to Vegas. Every thing was amazing. You will not be disappointed with the selection, the taste and the attention. Decor 10/10 - modern and chic. Food 9/10 - so full we had to come back for breakfast. 10/10 if more IG worthy. Service 10/10 - better than Ramsay Hell’s Kitchen, better than Emeril’s Fish House; ask for a table with Wayne (and his teammate Simon) and be ready to be impressed.

Decided to try this restaurant for paella. Made reservations, but arrived a lil early and was able to be seated immediately. The front of the restaurant can be a bit loud since it is near the entrance of the Aria so we opted to sit in the back which was a more quiet and relaxed atmosphere. Our waiter was very prompt and attentive throughout the meal. We ordered the octopus tapas and paella mixta. Octopus was the best we've ever had and it was so tender, flavorful and easy to eat. The paella looked large for two but had a thin later of rice. Good amount of seafood and meat. We asked for it a bit al dente, but rice was still quite soft so not sure how the standard would have been. We didnt ask for dessert, but since this was a special occasion for us they surprised us with complementary churros. Overall a great experience trying spanish tapas and paella.

My partner and I ate here for dinner and ordered 4 plates of tapas (could have got another one but still left full and satisfied). Each dish was delicious!! I would definately go back for the food but unfortunately I found the service slow and unattentive and overall not very welcoming. But damn the food was good so does that overrule everything else? Surprisingly good. Maybe I'm a cynic but bright lights Vegas strip doesn't seem to go well with the concept of tapas. Regardless of the ambiance (which was very much a Vegas Casino Hotel environment) the food was very much on point. I love hangar steak so I went for that first thing and do not regret it. The tuna stuffed eggs were creamy as well. Cocktails were well mixed and not terribly sweet.<br/><br/>I could see myself coming back to this.

Believe me you will be mind blown!<br/><br/>WHAT WE TRIED :<br/>Bravas Potatoes - Absolutely delicious! that Allioli sauce... made it sooooo good!<br/><br/>Stuffed Piquillo - these are stuffed peppers that have this beautiful cottage cheese filling and it just melts in your mouth like a dream..<br/><br/>Creamy Risotto - the most mushroomy thing you can ever imagine.. perfectly balanced with the nutty flavour from the machengo cheese... Yaaaasss!<br/><br/>Pan Machengo - Again a flat bread topped off with our fav machengo!<br/><br/>Ceviche - I love ceviche... in India very few places actually can nail it... but this place my god! This place was OK for Spanish tapas... wasn’t a huge fan and I’ve been to better places. The place isn’t crowded at all for dinner time service so no wait or reservations needed. Located in the aria hotel... looked beautiful but overall experience of food and mojito it was disappointing ... easily $100+ for 2 people. My black bean risotto was extremely salty... along with a salty rude server...

Great one on Strip in best LV hotels I stayed: Aria <br/><br/>They serve only tapas but hell they are good. I didn't give 5 only because of service as even though man was very kind he didn't know much about meals. <br/><br/>We ordered gambas in spicy sauce, beef and chees, crab salad and calamari. <br/><br/>All was phenomenal and very delicious, great mix of tastes, beautiful displayed and well prepared. <br/><br/>I would give small comment on calamari as even though we are them all, they were too salty for me. <br/><br/>Strongly recommend!!

We arrived and were seated immediately. That is as far as positive comments go. It took over 20 minutes before someone offered us water. When the waiter came he asked me what I wanted to drink and as I told him he left completely ignoring my spouse. Then after almost 20 minutes he shows up and we ask for a Spanish tortilla for her and he walks away completely ignoring me this time. When I asked to see the manager he ignored me again and it was a bus boy who saw our anger and brought the manager. <br/>The food in itself was not that impressive and the prices are way to high for the quality of food and service you get. <br/>I will no longer visit this place again.

Everything we had was great except the queso fresco bread...not what we expected and just tasted of olives. All other dishes, dessert, and sangria were delicious. I wish we'd had time to order the paella. It looked amazing.

We had dinner here yesterday. Had some tapas which most of them pretty good. The paella had a good taste but we all saw it different than usual. Most of the waiters etc weren't too pleasant. The host was very sweet and welcoming

Stopped here for a happy hour cocktail with my friend. We picked the $5 white sangría which was fresh and OK, but there was some fruit missing, wish I had ordered the red one that looked more 'authentic'. We also had the papas bravas with alioli to nibble and they were very good and the protion was enough for both of us. The place is very nice for a drink stop while shopping in the nice Crystals mall or while walking around Aria.<br/><br/>The bar is nice and the atmosphere at happy hour is relaxed but with a touch of class, loved the Spanish songs in the background! Service was courteous and fast enough.<br/>Will probably be back next time I'm in town for happy hour, and perhaps try the tapas for dinner.

We had an early show so I used the Bellagio self-parking garage and took the tram to Aria where we took advantage of the daily happy hour that runs from 11:30AM to 5:30PM at Julian Serrano's.  Julio was not available so we ordered glasses of 3 day red sangria from the bartender – excellent, the sangria, the bartender was just okay.  On the first round of tapas we ordered cheese coca (small flatbread with goat cheese, spinach and pine nuts) and a beet salad (striped beets, kale, goat cheese, croutons and beet vinaigrette). The second round included another round of red sangria and a bomba (a veal and pork tenderloin spicy meatball with spicy rocoto sauce) plus paella magro y verduras (pork and vegetables). Each dish demonstrated the chef's commitment to sourcing and a deft hand though the paella, made in a large batch each day, proved to be a disappointment.

AMAZING Tapas with Great Service!. We forgot to make dinner reservations for the night but we're surprised to get a seat quickly at Serrano's. We sat at a high top table that bordered the bar. We enjoyed the seat since we love watching the "behind the scenes" stuff like food prep and drink making. Our Server, Jason E, was knowledgeable and helped us pick out fantastic wines based on what we liked. He also helped in making recommendations and narrowing down our food choices from the extensive menu. In all we ordered: Pan Serrano, Lobster Fideua, Goat Cheese Salad, Roasted Sweet Apple and Foie Gras, imported Spanish Serrano Ham, Queso Fresco and Santiago's Cake. The Pan Serrano was so good that I wished it was full size and subsequently ordered the Seranno Ham. The only dish that fell a bit short was the Salad. There was only one small medallion of Goat Cheese. I wished there has been more. Beside that, everything else was amazing. Our daughter said the Lobster was the best she has had. My husband gave the same rave review for the Foie Gras. <br/>But, a restaurant is more than it's food. The atmosphere at Serrano's felt classy but not stuffy and the seats no was quite comfortable. But is was Jason E, our server, that really helped make this meal great. He was listened to our tastes and made appropriate recommendations, was knowledgeable about the wine list, and was friendly and easy to use talk to. <br/>I recommend Serrano's to anyone looking for great Tapas!

The only thing I have to say for Julian Serrano in Vegas is 'Fantastic'. 9 out of 10.<br/>Tapas dishes are very tasty, and as appropriate for tapas, small dish servings. They have an excellent wine selection and their Sommelier is a knowlegable and helpful fellow to pair up the wine with the food. Bring your wallet because it is not cheap there but well worth it. If this is what real Spanish food is suppose to taste like then I want many more.

Go here and go crazy. Wonderful place. The service was ridiculous: practically everyone attends to you while you are there and everyone wants you to have a good meal... and works at making it so. In all fairness we might have lucked out as we went for an early lunch and they were not super busy. Excellent food and the décor is second to none. I will say that I loved the food and sangria a little more at Jaleo but the overall appeal of Julian Serrano is higher, certainly the restaurant is better designed and more comfortable. Wonderful croquetas and the oxtail was to die for. Go here and lose yourself in the menu. Order everything.

Great early dinner. This place has an early dinner menu fo $39.00, it has a lobster gazpacho excellent or roasted peppers in with goat cheese is to for or chicken crochet exceelent. The main courses, fresh fish, or chicken rolande very rich or a beautiful pork chop on a mashed potatoe bed again to die for. Desert chocolate moulted cake, rice pudding and/or almond cake all excellent. I love these condense menus as I love food but never know what to eat and I usually leave it up to the waiting staff. This might be another must go to place.

Great tapas, great time!. My husband and I ate at Julian Serrano because we have eaten tapas at home in Oklahoma City and wanted to see how tapas elsewhere compare. We were very pleased we chose to eat here. We had: Gambas (shrimp in a chili sauce), seared scallop in romesco sauce, the spanish charcuterie platter, brava potatoes, stuffed piquillo peppers, stuffed dates, and black pig pintxo (pork shoulder). All were good except the dates - cloyingly sweet! The seafood items were just okay - not bad, but not awesome either. For awesome, I would recommend the stuffed piquillo peppers, spanish charcuterie, brava potatoes, and black pig (really, get the black pig and the sobrasada on the charcuterie was to die for!) Overall, we really liked this and service was outstanding. Although expensive (I think it was a bit over $100), we spent as much/more on other meals and weren't as impressed as we were with this meal. Tapas are just fun anyway, and this place does a decent job with that concept.

Julian Serrano (Aria). This was the first dinner of our Las Vegas vacation this year. My boyfirend and I loved this restaurant. Not only was the food delicious but the presentation was superb. Not to mention, our server/bartender (David) was AWESOME! He made our experience even more enjoyable. Food is obviously the first reason to go to a restaurant but when you get great service it makes it all the more a better time. He was outgoing, funny, and willing to take our picture. Although, I had a tough time getting a picture of him! I would suggest this restaurant to anyone looking to try tapas. This was my first tapas experience and i was VERY impressed! Thanks David!

Wonderful. Great offering of classic and new tapas. Service was outstanding, decor was nice and the food was outstanding. we tried 15-20 different plates. All were cooked perfectly and arrived in perfect order. We never had more than 3 plates on the table at one time, but as a plate was empty a new tapas arrived. Perfectly planned by out waiter. A few of my favorite dishes that I would order again without hesitation: black rice with fresh calamari and lobster meat, pintxo de chorizos - mini spanish pork chorizo and garlic mashed potatoes, ahi tuna tempura with avocado rocotto mayo and fried calamari steaks with alioli sauce. Average at best. Paella was a bland mush without much color and even less taste. Spanish tortilla like eating a salt lick (seriously, how do you get this simple dish wrong?). Pork pinxto was tasty but had fatty portions that were tough to chew through. Service and decor was great, however. This restaurant is definitely overrated.

Oily Paella and Bland Tapas!. The place is beautiful. Depending on time of day and crowd, there is energy here. The waiters are excellent. The food...not that good! Perhaps they were having an off day, but everything was a little too delicately flavored for me. The Brava Potatoes are comparable to the Cheesy Fiesta Potatoes at Taco Bell (congratulations Taco Bell, I guess). And the mixed paella was a oil drenched rice with overcooked crab and lobster.

Went here for dinner , good service and the tapas was excellent but word of warning portions are small so lamb chop means 1 chop , so expect to purchase at least 5-6 plates . I recommend the lamb chop and the scallops , all the meat dishes were really cooked to a high standard , the sangria is great if looking for what to drink.

Service was fantastic, staff was friendly, perrsonable and there when you needed them, but not intrusive. Spanish Doughnuts were a nice surprise for dessert. Quick and good bar bite. Was hungry but not starving. Sat at bar with a buddy and ordered up the steak and ahi tuna tempora. Both were excellent. Also grabbed the dark chocolate lava cake for desert. Small and pricey but very tasty.

Great service, great food. Try the Veniciana Paella - it was really good. The tuna/raspberry skewers were weird, but other tapas dishes we tried were great. Decor was not what I was expecting - it's pretty casual.

Food excellent, service sucks.... Food was excellent, the waiter was terrible. After not being able to find our waiter, we signaled the manager. He took care of us the rest of the evening but everything he did was slow. If you don't mind crappy service, then the food is worth trying. Otherwise, I would suggest going to TAO at the Venetian, excellent food and service.

Only on the weekends. I've been 5 times, four on the weekends once during the week. What a surprise ( and embarassment) that they cut their menu, change their music ( to bad '80s), and allow their service to slide down to unbearable " during the week" is what the manager told me anyway. I had a great time and the food was great but only on the weekends.

I went for dinner before Elvis (not a good show, ok at half price TKTS) and sat at bar. Bartenders were very attentive and nice. Menu had some great choices. I had traditional chicken rolls, rasberry tuna, shrimp w/ garlic and chorizo with mashed. I recommend chorizo, chicken, tuna and I won't even mention shrimp(it was that bad), in that order. I loved the chorizo and the chicken rolls, the other two I could do without. The sangria was great, I would suggest going for sangria and a couple of apps, then moving on to another place for dinner. I would go back for dinner, but not before trying several other restaurants in Vegas.

Fun place, would definitely come back.. Let me start off by saying that the restaurant, like many others have already noted, is beautiful. The vibrant colors all throughout the restaurant along with its clean design aesthetic is a treat for the eyes. <br/>The menu offers a variety of tapas and ceviches which allow you the freedom to try many different plates of food, be it meat, seafood, or vegetarian. You can also opt to get one of the more substantial dishes, like the chicken (sous-vide) or the pork loin. We tried the chicken and it was truly something special. I would definitely recommend it. We had some tapas recommended to us by the maitre d', which were the Huevos Estrellados and the Spanish Tortilla. Both were wonderful but we especially loved the Huevos Estrellados. The dish is comprised of a fried egg on top of some fries with a little Spanish Chorizo... delicious! We also tried the Tuna Tiradito which was also very good.<br/>Now on to the paella... We decided to try the Marinera Paella with the mussels, monkfish, calamari, and shrimp. It was... good... very good, but I expected a little bit more to be honest. The seafood was fresh and cooked very well. At times, the dish really came together, when getting a mouthful of the saffron rice with the various seafood parts, but... next time, I think I'll try the Valenciana Paella...<br/>To wrap things up, the menu, like the decor of the restaurant, is a lot of fun. I can't wait to come back to try the other tapas out (quite the selection). The service was great, and the location is even greater. If you haven't checked out the Aria yet at the City Center, you really need to plan a trip to Las Vegas... right now. And if you're up for some innovative Spanish cuisine, definitely check out Julian Serrano.

Great service, good food. We stopped in here for lunch and the food was very good. Some things were better than others, and being someone who doesn't eat cheese or cream, it was a bit more difficult for me to find something to eat. However, they did have an extensive vegetarian selection, which was very nice. Generally in my experience, eating at a tapas restaurant can take forever, which is fine when you want to make a night of it, but we were able to get in and out in an hour and a half, perfect for lunch. Would definitely recommend this establishment.

So good we ate there twice~. The food here was amazing. The best Tapas I have had. We liked it so much we ate there twice during a 4 days stay. The portions are small but enough that everyone can have a bite. The food was correctly spiced and the service was great too.Everything was fresh and cooked the way it should be. Both the red and white Sangria are a must try. I order Sangria almost everywhere I go and these are at the top of my list.

Not bad, but spend your cash elsewhere. After reading some good reviews a group of us tried Julian Serrano's new tapas restaurant in Aria. The restaurant is called Julian Serrano, and the prices certainly reflect the chef's arrogance as much as the name. Everything was great, but if I had to come up with a sixth taste (besides sweet, sour, bitter, salty, and umami) it would be 'value,' because the value of a dish, or lack thereof, seems to make things taste different to me. When you order here you are hoping for dishes that are so unique and wonderful that the prices are justified, yet when the food comes out of the kitchen it becomes evident your expectations were too high and disappointment is inevitable. Take for example the imported Spanish 'pata negra' ham, described on the menu as 'the most delicious ham in the world' for $35. Obviously this is a ridiculously bold and definitive statement for anyone to make about a single meat, however, hopeful me fell for the marketing and ordered it anyways. While the ham was certainly lovely, and I can't say I specifically remember ever eating another that I found better, it was still a meager portion of ham for $35 and I've had comparable before (the curing of meats throughout Europe is an art form, and I've been lucky enough to experience this first hand).<br/><br/>The combination of small portions and hefty prices is bound to result in continued disappointment as you make your way through the menu. The scallop was done about as well as any other, but $12 for one of them is just too much to ask. The mushroom risotto ($10) was creamy but slightly underdone and the salmon with truffle ($12) was just so so. Definitely pass on the avocado canneloni ($10) which I found to be texturally amiss and void of any redeeming flavor. The almond stuffed dates ($8) were alright, but not only are the dates at Firefly a better value, they taste better as well. These dates had a panko bread coating that was unnecessary and bulky, which took focus away from the dates themselves, and the accompanying spicy sauce didn't pair well with them at all. The cheese plate ($14) included cana de cabra (soft goat milk cheese), aged manchego, and soft sheep milk extremedura, and was served with a fruit compote and soft toasty bread. Each cheese was complex, and it's hard not to love cheese, but I don't know if anyone other than the producers can really take credit for making a fine cheese plate. The piquillo peppers were delightful, with an oozy cheese center that was far more sophisitcated than that of Firefly, but was not worth the $10.<br/><br/>The good news is that I found the least expensive dishes to be some of the best anyway. The open-faced Pan Manchego ($8) was a revelation in grilled cheese, and the beet salad ($10) was not only an architectural gem but a well-balanced and colorful creation. The steamed mussels ($9) were plump and the broth was something special, though it was frustrating to capture in the shell spoons because of the pot used to serve them. In addition to tasting better than most of the other dishes, this was also the best value on the menu. If you order these items I think you'll be happier with your experience and your bill.<br/><br/>Tip: I noticed from the menu pictures taken by another blogger that prices were $3-5 less in December of last year. If you do want to go here I would suggest you hurry, before they become even more absurd.

Makes us miss Cafe Ba-Ba-Reeba even more.... We had really hoped to be more impressed. It's not that the food isn't okay... it's split. Some of the tapas plates are worth the $10-14 cost... half are not... (and all portions are skimpy). <br/>For two people, you order 7-8 tapas.. so there's $50 bucks of your meal that will be for just ok food... sorry that's just not good enough... (at what should be a top notch Strip restaurant). <br/>With a $50 bottle of unimpressive wine, you'll be in for $150 plus tax and tip. <br/>Will you be drawn back for a second try... maybe you'll remember the pluses over the shortcomings.. don't think we will though.

NIce Experience. My wife and I went to Julian Serrano for our anniversary and we were relatively pleased with the experience. We ordered 4 or 5 tapas and the Mixto Paella. The dates wrapped in bacon were probably the best out of the bunch. The paella was very good as well, but they didn't mention that there was going to be any mussels in the dish. Not a huge deal, but something that they should have mentioned. The service really started to lag towards the end as we waited a long time for our dessert and for the check to be dropped. All and all, a pretty decent experience.

Best decor in las Vegas. The strip las Vegas is always competing for the best beautiful decor and food. Newly opened Aria has bunch of restaurants that we get to try. So far Julian Serrano has out beaten the best of the best restaurants. Food is not just fresh and aromatic but it has a taste out of the world. No wonder they are top rated restaurant already!

Good but ehhhhh. I enjoyed the set up and the sangria. Met the chef/owner who is wonderful thanks to a dear friend but was unimpressed with the menu. The tapas were good but the paella was unimpressive and wasn't crunchy on top. 3 cocktails, 2 tapas, traditional paella for 2 for $100 including tip really wasn't so bad price wise. So for cocktails and a quick app I would venture back ;)

Hip Drinks & Solid Tapas. Two dinners, two winning meals. The Patatas Bravas are one of the best things that I have ever put in my mouth. The white ceviche was great, Sangria is top notch. If you're a bourbon drinker order the Valencia. The Paella is inconsistent but I have a feeling they will get there. Fun atmosphere and unless you managed to find your way here without ever having eaten on the strip the prices are not shocking. A definitive jump up from "Firefly" - which I also like.

Not work the Julian Serrano stamp- NOT WORTH IT.. For a person who has visited other Julian Serrano restaurants, this experience at the Aria casino location was extremely disappointing. I do have to give credit for their Sangria, it's excellent! as are all cheeses, charcuterie and tapas that we tasted (tuna, huevos estrellados, gambas), but I do have to say I have never had such a BAD paella in my life. Don't waste your $40 dollars, Rice a Roni does a better job at this than this new location. Try the other Julian Serrano restaurant at the Bellagio (Picasso). Service and taste far exceed this location.

Good tapas, awful value. My husband and I have eaten at numerous tapas restaurants in several cities, and typically about 6-8 tapas plates are sufficient to fill us up for dinner. Not surprisingly, prices at Julian Serrano were on the high end for tapas restaurants in major cities (typical of the Vegas strip) but the problem was the portions, which were miniscule even for tapas. After the first 4 we ordered (including a $14 meat sampler) we realized we'd have to order about 12 of these to constitute dinner. We therefore cut our losses at $70 and went to the Burger Brasserie at Paris for a real dinner.

First night's <br/>supper, we dined at Julian Serrano Tapas, came highly recommended by our <br/>friend.  Julian Serrano Tapas turned out to be not the most <br/>authentic, but tasty enough.  The food came out at lightning speed, as if <br/>the restaurant already knew what we were going to order.  Highlight was <br/>the cobia, calamari and the fisherman's soup.  The calamari a <br/>la plancha was simply grilled, fresh, tender and awesomely garlicky.  Generous amount of seafood was used in the fisherman's soup, with the <br/>nicest saffron flavor, a condensed version of the ocean was captured all in a <br/>bowl.  I never had <br/>cobia fish before; it was a firm white fish with a texture and degree of <br/>fattiness between sea bass and cod.  This <br/>preparation yielded crisp delicious skin, drizzled with garlic oil, with tomato <br/>and dry pepper, slightly spicy and tasty.  The duck salad was a surprise.  I did not expect a piece ...

Overall, I loved my experience at Julian Serrano! Great service and splendid food! We informed the waiter that we have a show to catch and he made sure that our orders would come in a timely manner which he did. Each dish was eloquently crafted to it’s best. Probably one of my favourite and best tapas meals I’ve had. I would say it’s comparable to Susur Lee in Toronto except this is a Spanish fusion. Plates that I highly recommend, Black Rice, Risotto, Oxtail and Cured Meat. Oh, I want to go to Vegas now!

Mother's Day 2010 and I decided to take my wife to Julian Serrano. It was a bit of a hike from the self-parking garage but we eventually found it. It's an odd space near the check-in desk, close to the doors leading to Crystals and is completely dwarfed by the imposing entrance to Sage. Plus, it's open to the check-in desk and casino so it looks like more of a casual eatery than a fine dining establishment. It wasn't more than 75% full and we were seated right away at a table for two. //FOOD (from best to worst)// - Creamy risotto ($10.00): Cooked to a perfect al dente texture, wasn't mushy at all, wonderful flavors. I was craving more before we were even finished with the plate. Possibly the best risotto we've ever had. - Gambas ($12.00): It looked like a very simple dish. 4 shrimps in a broth that resembled clarified butter with garlic chips and peppers. For a ladies' date with my friend, we went to Julian Serrano at the Aria to try some Spanish Tapas : A lovely set up Saute Mushrooms - Hedge hog mushrooms, tomato confit, and garlic demi. These mushrooms had a really meaty texture, can't believe they were mushrooms! Brava Potatoes- These crisp potatoes were quite addicting. Vegan Gazpacho - A Spanish chilled tomato-based soup. Before I ate the soup, I was instructed to eat that gazpacho ball on the spoon. Right when I ate that ball, it felt like a yolk exploded in my mouth... The reaction on my face amused my friend and our server haha. I liked it, I just didn't expect that explosion! Mediterranean Bass - with donostiarra sauce, tomato confit, arbol chili, and garlic. Churros - To be honest I was a bit reluctant to try overpriced churros. I guess I'm just used to churros for $1 or $2 at a carnival or theme park. The beef was nice and tender. By now we were more than full and then the paella showed up. The Valenciana paella ($45) was filled with chicken, rabbit, spanish pork chorizo, vegetables, and saffron rice. It was a tad salty but still worth the try. We'd be happy to re-visit Julian Serrano the next time we're in Vegas - but I'll try to not order the whole menu!
