I wanted the food to taste as good as the atmosphere and location was. We stayed at the resort and took our kids to dinner here during vacation. The staff was incredible, drinks really good, great ambiance. However the food just left some to be desired. The plating looks delicious but the actual flavors fell flatter than the dynamic look. Maybe more salt or acid or something to bring out some more depth. It also wasn’t just one dish, it was across the board.

OH YES! Outdoor dining was fresh and a warming delight. Service was the best "business as usual". There are outdoor heaters if needed. Can recommend the Scallops & Sea Bass. They also have a great hamburger

Coastal-cool steakhouse located in the Hyatt Regency. Had a team dinner here on a Friday evening with a reservation at 7:30pm. We had a private room but there was plenty of space available both indoors and outdoors. We started with the creamer potato cakes, scallops, and shishito peppers for the table, and the potato cakes were the hit. Note that the shishito peppers do come with crispy prosciutto on top. The scallops come four to a dish and I enjoyed them a lot. The main draw for entrees are the steaks, but they have plenty of non-steak options and also have a vegetarian option. I had the Chilean sea bass, which came with mashed potatoes and veggies on the side. The fish was a bit bland and wasn’t my favorite. You do have the option to add a soup or a salad prior to the entree. The burrata and peach salad was light and fresh. I got the Six Degrees of Chocolate which is the signature dessert, but was a bit lackluster. Overall, I liked the appetizers the best and it was a good venue for a business meal.

The kind of place that feels comfortable the moment you walk in the door. There was no wait for a table when we went, and the host sat us at a wonderful outdoor table overlooking the ocean. Delicious food; the huevos Rancheros were unlike any others I've had. The perfect combination of sauce with the residual (fried?) tortilla crunch that has me already wanting to go back. This was a date for my wife and I and we are already planning our next time. 3 out of 5 stars, wouldn't change a thing. EXCELLENT

We stayed in the hotel for a week and had breakfast every day here. They offer a great selection of tasty, healthy options for buffet. We also ordered a la carte and our favorite items are the Nutella waffle (light and airy, sprinkled with toasted hazelnuts and melted chocolate ganache on the side) and zesty lemon blueberry pancakes, which were served in heated plate so the lemon butter (which adds a nice fresh lemon aroma to the pancakes) remained soft and pancakes stayed warm till last bite. Services were great as well.

Friendly service and Fabulous food! A great breakfast in a beautiful, stylish setting with lots of indoor and outdoor seating. The menu is quite varied with many interesting sweet and savory choices. Try the Stuffed French Toast, so delicious!Afterwards, stroll around the beautiful grounds of the Hyatt or walk across the bridge over PCH to the beach!

Amazing restaurant, from the modern and nice-looking restaurant, to their patio, and of course the food. Great experience. All the food was amazing, from bread and butter to the last bite of that dessert. The Wedge salad is not the typical one you know, but was delicious. Salmon was crispy on the outside and tender on the inside. Lamb chops amazing. The service was also really good and waiter was funny and very approachable. Too bad we were just visiting and live in Texas, but if you ever go to Huntington Beach and like great food, then you know where to go.

Excellent, beautiful food in a lovely setting. We ate at Watertable for two breakfasts and for a birthday dinner in their private dining room. The food was top notch. Highly recommend for special occasion or vacation. The Hyatt Regency is a lovely property and well located near the beach and the Huntington Beach town area. I especially loved the fig salad pictured below. It was beautiful and delicious. We all ordered different items off the menu and everyone loved their food. The other photo is their Chilean Sea Bass dish with parsnips and mashed potatoes. Delicious !

Easily my most favorite restaurant in the Huntington Beach area. The breakfast options/portions/variety of dishes are perfect. Every meal here is amazing, there aren’t any bad choices. The service is incredibly fast and everyone is so friendly. 10/10 HIGHLY RECOMMEND!

Exceptional location within the Hyatt Regency, Huntington Beach Resort. The restaurant decor is rich in tone and plush. There is a nice long bar that attracts a decent cocktail crowd and there is ample dining rooms and outdoor patio outfitted with heaters making certain you are comfortable. I had the good fortune to dine for breakfast, dinner and even room service. Every dish is presented impeccably well thought out and artistically attractive in presentation. Of course, the taste is sublime. Their quiche, avocado toast, Eggs Benedict and breakfast pizza were all a scrumptious gastronomical feast as was their dinners. I tried their bone marrow appetizer and highly recommend it. The bones sit upon a bed of sauteed mushrooms in a rich broth. I actually do not enjoy mushrooms but this dish sure changed my mind. They could even serve this alone with bread and folks would order that too. Just amazing! The fish is fresh and prepared to your taste. The lamb chop appetizer was outstanding as the seasoning is superb. One really can not say enough about the level of service- attention to detail, and hard work by every staff member from the parking, lobby, kitchens, restautants, pool, spa, shops, and housekeeping - exceptional across the board. So kudos to tge head of HR!!! My heartfelt thanks to all who made my first solo holiday without my hubby, who passed, so very memorable. And to think I agonized so about traveling and being in a hotel solo. Definitely returning here.

My wife, our guest, and I had a fantastic dinner at Watertable last night. The atmosphere was welcoming, and our server was knowledgeable and attentive, making spot-on recommendations. I had the Watertable Burger*, and it was outstanding. The truffle aioli and arugula added a sophisticated touch, while the muenster and port onion jam created a rich, savory flavor. The house cut fries and jalapeño dip on the side were addictive and the perfect accompaniment. My wife ordered the Citrus Salad, with added chicken, which was a refreshing blend of mixed greens, toasted pistachios, castelvetrano olives, and crumbled feta. The honey citrus vinaigrette tied everything together beautifully. Our guest enjoyed the Roasted Baby Beet Salad with added salmon on the side. The marinated kale, pomegranate balsamic reduction, drake farms goat cheese, and brazil nut crumble made for a delicious and visually appealing dish. The salmon was cooked to perfection, adding a satisfying protein to the meal. To accompany our meal, we decided to indulge in their wine selection. We were delighted with the Textbook Cabernet Sauvignon, which had a lovely balance of dark fruit flavors and subtle tannins. The Ridge Vineyards Zinfandel was equally impressive, boasting a bold, fruity profile with a hint of spice that complemented our dishes perfectly. We had an exceptional dining experience at Watertable and can't wait to return. Highly recommended for a memorable and delicious evening out!

My mom and I had breakfast and dinner here while we stayed at the Hyatt, and after touring colleges all day, this was the perfect place to come back to! The staff gave great recommendations, and were super friendly. The bread they served for dinner was sourdough topped lightly with flaky salt, and made for the perfect preamble to the salmon belly and bone marrow appetizers we had. Salmon belly was amazing and well complimented by the avocado sauce and pickled radishes, and the bone marrow is melt-in-your-mouth perfect. Just a reminder that it's basically just fat, so I would recommend sharing so you don't end up with overwhelming portions like we did. Breakfast was solid as well, and I really enjoyed the flatbread and the prosciutto-avocado toast. Anything involving pancakes or waffles tended towards the sugary side (more so than I expected) and I wish the lemon in the lemon blueberry waffles was more pronounced, but overall still good.

Staying on property, the Watertable was an amazing restaurant with a great selection of appetizers, main entrees, cocktails and wine. The service team was top notch! Super friendly, helpful and time was of the essence. Highly recommended.

Always a wonderful experience here. The staff always does their best to accommodate requests. Everyone is cordial and have a good knowledge of their menu. The ambience is not stuffy at all, perfect for a nice, romantic date. And that bread they serve is to die for. We like to hang out at the bar before we get settled in one of the many cozy spots there. There's also a fire place that you can request for if you're looking for that extra romantic touch. This is becoming one of our favorite date spots. �

Celebrated my Birthday here with 3 other couples!!! Sat on the patio I was kind of breezy but the heat lamps did the trick. Appetizers, entres, drinks and dessert were all superb!! And Ricky our waiter was the best can't wait to go back when it warms up☀️

I was going to make reservations for my husbands birthday dinner either at Mastro's or Andrea's in Newport Beach. Since we live in Huntington Beach, I decided on "Watertable" which used to be the "Californian" at the Hyatt in Huntington Beach. I am glad, we went there. My husband and mother had the prime rib and I had the Branzini fish. The steaks were cooked to perfection and included a side dish and special meat sauce. My fish was one of the best I ever had and the vegetables were delicious and out of the ordinary. We ordered the potato cakes for an appetizer and chose a Chianti and Sangiovese wine to go with our meal. We chose the patio seating facing the water. Amy, our waitress, is experienced and attentive, so is her helper, Heimy. My husband was treated to a generous, complimentary fabulous desert of fresh berries, homemade ice cream, biscotties and chocolate ribbon with "Happy Birthday" written on it. Heimy brought some extra warm bread (delicious) for our mother to take home. When the bill came, we expected it to be much higher. With the local discount we paid less than half of what we would would have paid at Andrea's and did't even have to drive very far. After the dinner Heimy showed us the entire restaurant and the private rooms that are available for special events. What a change from the former "Californian" restaurant. The bar area itself wants us to come back for drinks and appetizers. Everything is FIVE Stars all the way!!! We will be regular customers. We are fortunate to live in walking distance.

The space was nice, the service impeccable. The food was delicious although my medium rare steak came medium well. And, the $25 Court fee is a bit much. The bar menu looks enticing however the drinks were weak.

I've been to the Watertable a few times, but not for dinner. Last night, we stopped in for an after dinner drink and dessert. We ended up having the meat and cheese plate. It was so good! Delicious wine. Great service.

Breakfast Buffet. Califronian is a lovely setting for a Sunday brunch -- outdoors by the reflecting pool with its Dolphin water spouts arcing water jets at each other and an expansive view across PCH to the beach. Although you'll find less expensive alternatives on the breakfast menu, the $24 buffet is good. Set up in its own room so that you're not jostling with diners trying to get back to their tables, the buffet has just a few stations and it's not over-crowded with selections that don't bear up well sitting in chafing dishes. You'll find fresh scrambled eggs (a tureen of freshly prepared salsa next to the eggs), crsip bacon, excellent papaya, watermelon, and a set up for lox and bagels, etc. There's also an omelete station and a selection for kids on a short table. <br/>My only suggestion would be to drop the canned music.

Best place for quality food in HB.. I think that The Californian is the only properly ambitious fine-dining restaurant in Huntington Beach. It was certainly head and shoulders above any of the other places that we tried on a recent vacation. It's a swanky place (with the inevitable downsides -- the prices are a bit on the dear side, and the atmosphere tends to the starchy). But the food and the service live up to the high standards that they're so conspicuously setting for themselves. I'd recommend going here for special intimate occasions (much less so for group occasions -- the atmosphere is one for savouring quality, not for festivity). <br/>My one piece of advice to the front of house staff would be that, instead of having a manager-type who goes around repeatedly asking people if everything is alright (it is, and the waiter's already asked that, so you're just interrupting) you should hire a proper sommelier.

Nailed it! Fantastic beef tenderloin cooked to perfection, perfectly done veggies, splendid creme brullle and excellent artisan bread. Our server Demetria really cared about our dining experience. I hope to visit here again.
