Fuji Japanese Restaurant

I came here just about 8 minutes before they closed and I was still able to order sushi and a salad to go. Service was fast and friendly, and I was impressed by the interior. Felt cosmopolitan, urban. Fast forward to bringing the food home, and if take out could be sexy, then they accomplished it. Fresh salad and sushi, beautiful containers and every need met. Looks like they have their own delivery car too. Will go in person, well in advance of closing for my next visit to soak up the atmosphere.

We ordered online knowing the "5-10 minutes until ready" would be inaccurate, but went to the restaurant about 15-20 minutes later. They hadn't started the order, but let us sit to wait. We enjoyed some hot sake and the wait staff was very pleasant despite being very busy that night. Our order turned out great. Each roll had their unique flavors and all were put together in a very appealing arrangement despite being a "pickup" order. We really enjoyed the experience even though we hadn't planned on sitting in.

Hands down, the best sushi in Fairbanks. The quality of fish is second to none. The owners commitment to excellence is something I can’t help but commend. And this restraint has become a weekly destination for me and my wife for date night. In fact, when I told the owner of my love of Toro and Otoro(fatty and super fatty tuna) he actually started ordering small quantities so they would be fresh for me when we came in for our weekly date night! That kind of service you can’t find from commercially owned sushi chains.
