I stayed at Hyatt Regency Denver at Colorado Convention Center, so I gave it a try breakfast buffet here. Price was reasonable ($26) for the quality and quantity of foods they offered. I've been to over 60 hotels since last year and the service from this place was one of the best. Ms. Jordyn checked on me many times even though she was so busy. She responded quickly for every request I asked her. I always try omelet bar, and this one had a very busy but one of the best omelets so far. My favorite was pastries. They were so tasty and had lots of sorts of it. They were not cheaply made ones.I would highly recommend this buffet to anyone to stay at the hotel. The only reason I am giving 4 stars is seeing fruit flies at the food serving area.

Had breakfast at the Former Saint during our stay at the Hyatt Regency in Denver. The breakfast buffet and service were both great. The restaurant is large and nice done, we loved the experience!

Former Saint is the closest bfast buffet to the convention center. The space is nice and bright, open and clean. The selection of food covers the bases with an omelet station, typical hot items, and fresh cold items as well. A good place to fill up before any long day of conventioning. Good value that will run abt $25 (hopefully on a per diem).

Ate here twice while attending a convention because service was always amazing.

Everyone on staff here was amazing and would ask if we need anything.
Bonus compliment to Tasha who would make sure I drinks never got low and knew when to come over to the table without feeling rushed. Truly amazing service here.

Had lunch here while attending a conference at the convention center across the street. Super crowded but we were able to sit quickly. Our meal came quickly as well and it was delicious!
I had the seasonal greens salad with grilled chicken and it was very very good. It had blackberries, pine nuts, watermelon radishes and snow peas. The dressing was equally as tasty.

Fabulous dining experience. Great views of street level Denver (including the blue bear), personable wait staff, trendy atmosphere, and incredible food. Highly recommend the prime rib steak and fish and chips. Perfect portions and big sides. I'll be coming back to check out more of their share-ables, like the elk carpaccio (pictured), and their cocktails!

A great find at the corner of 15th & California directly across from the Colorado Convention Center. The kitchen is visible in the back left as you walk in. The restaurant is accessible from the street and from inside the hotel. The dining room is very large with high ceilings, a great place to have happy hour drinks. The tables I sat at we're along the windows that face the street. They had cute couches that you use to sit at the table. They're cute, but not practical, hard to eat at the table. The chicken biscuits were phenomenal. My favorite part of the meal. I got a burger for the entree and it was mediocre. Overall this place is great for the price and a good place to use to pregame before a show at the DCPA.

Incredibly accommodating for dietary restrictions or general food requests. I needed bland, plain food after having some stomach issues, and Kimberly (am/afternoon) and Lacey (evening) were excellent advocates on my behalf to communicate my specific requests with the kitchen staff, and everything turned out perfectly exactly as I ordered, off menu. They were kind, patient, sensitive, knowledgeable, flexible, non-judgmental and extremely accommodating without complaint or annoyed attitude. Very much appreciated!!
(FYI: online the menus say morning and noon, but "morning" (AKA breakfast) ends at 11 and "noon" (AKA lunch) starts at 11 am. They still accommodated my needs despite the time of day but the menu online could be clearer regarding times menus are served.)

My wife and I had a fantastic dinner here. I had the bison burger which was great and she had the squash risotto which she also raves about.

The atmosphere here is deceptively casual; the service here is phenomenal, prompt and courteous. I ordered the Harrissa Grilled Chicken Breast and it has to be the most tender and flavourful chicken I've had in a long time. The grilled onion couscous side was the perfect pairing.
I was only here for a short conference and I'm not sure if I'll be back in Denver anytime soon, but if I am, the Former Saint will be my first stop.

I’m one of the rare people who like my steak well done. Not only did the chef fulfill this order but it was the BEST well done steak I’ve ever had. I literally ate my porterhouse down to the bone. The chef came out and asked how our food tasted and I gave my compliments to her and she was genuinely receptive of any criticism (which I didn’t have any). I highly recommend this restaurant and the porterhouse if you’re in Denver!

I came here with a friend for restaurant week and we left so full. They give out huge portions for each of the selections so by the time our entrees came we barley touched them. Overall the food was definitely the best part and we started with the pimento cheese and crackers with celery ( the crackers were amazing ! ) . Then I did the elote coquette's which were good but I wouldn't order them again and my friend got the quail and waffles with the waffles tasting like stuffing made inti waffles which was surprisingly good. For entrees she did the elk and I did the bison hanger steak both cooked perfectly. I enjoyed mine a little more for the flavors and the fries it came with were to die for ! The only negatives were the okay service and the ambiance. It was loud even with the place being half full and with the massive high ceilings it didn't feel intimate . You could also see where they served buffet breakfast from where we sat so it was a constant reminder it was a hotel.
