Came in for a drink and work session. The space is much bigger than it appears from the front. There’s also a handy connection to the donut shop next door. Juice was reasonably priced but the guest wifi (no password) was slow. Staff and vibe seemed slightly too cool for school, but the overall concept of coffee, bar and restaurant makes me curious to come back and see what it’s like at night.

I wish I could give them a 6 star review. I have been going here at least once a week for the last month. Here’s everything you need to know: Price: $ - super reasonable and affordable. Great quality for a great price. Everything has a great portion size for the cost. Atmosphere: Anyone can come here. It is the perfect spot for people to socialize or get their homework done. Staff/ownership: every single employee here is super nice and cool. They are all very good at their job and you can tell they enjoy being there. They always have a smile on their face. Events/Weekends: I’ve been here when theres movies being played, thrift store pop-ups, and clubs meeting. Overall: this is always my first recommendation when someone asks me where to go in denver. Vegetarian take: the options here for vegetarians is endless. You can tell they want everyone to have a great meal.

The vibe here is stellar. Came in with parents and ordered 3 coffees and 3 breakfast bowls with French toast. The coffees were perpetually instantly ready. Which all were fairly good. The breakfast bowls all tasted authentic, the fresh fluffy eggs with cheese, apple smoked bacon with a nice savory touch, the sploodge of avocado, which I didn’t mind as it tasted quite fresh as well. But man, everything I’ve mentioned dulls into comparison to the French toast. The French toast slapped me like my mother when I spoke back, it lit up a lightbulb in my head saying “where have you been my whole life.” The French toast takes the cake for this meal and it’s not even close. Service was quick and polite. 9.9/10. It was a little pricey.

Just the kind of breakfast spot I needed to begin my day in the Mile High City. Okay listen my breakfast was tasty and my latte was awesome too. BUT the star of my meal was this fruit tart THE BEST FRUIT TART I HAVE EVER HAD the pastry was sooooo fresh the fruit sooooo fresh. I may fly back there just for a dozen of the tarts. But yes my breakfast was really good so 100% try them out for the food & cafe aspect too

When my wife and I saw that this place catered to people with food allergies, we knew that we had to try it. The staff was passionate about the business and willing to go above and beyond to help us. They normally serve their GF chicken and waffles during weekend brunch, but they made a custom dish for me on a Tuesday morning. They also used their gluten free bread to make French toast for my wife.

Excellent coffee and food! I dropped in for some quick breakie on a Sunday morning and ordered an iced Americano and a Chorizo Smothered Burrito (scrambled eggs, chorizo, cheddar cheese, Wu-Tang tots, flour tortilla, green chile, $14.50). The coffee was fantatsic. Flavorful, fresh and sharp. Also the fragrance was delightful, nothing better to smell in the morning. The burrito was scrumptious. I appreciate any restaurant that isn’t greedy with the goods. The burrito was stuffed with chorizo and Carbon’s signature “Wu-Tang tots” which I tried on a different occasion to Carbon and they are phenomenal. 10/10!

Great atmosphere, great food, and great people. We hit up this spot around 12:30pm and were able to get some good breakfast food and coffee. Not a huge fan of the beans they roast however the cafe was exactly what we were looking for.

Staff was very friendly. Ambience was really good. Music was just at the right amount where you could hear conversations. We tried the below 1. Drinks: Cappucino and Mocha 3.5/5 2. Broccolini with toast - strong smell of goat cheese - other than that it was good. 3. Breakfast sandwich - 3.5/5

Great service and great food. We made it in for brunch and coffee. Ordered a dry cappuccino and it was dry! I always appreciate that since it can often be too milky even if I specify dry. The chicken and waffles was great. The the dirty ol biscuits was also good, nice flavors, maybe slightly salty but not too salty to complain about. I’d recommend getting here earlier than we did (morning) to avoid them being out of biscuits. We got the last ones. I’d recommend this place.

Absolutely delicious food! My friend ordered the Chicken and Waffles which was delectable. My meal was the Smash Tot Hash (with brisket) and it was SMASHING. I also ordered a Cold War because I wanted coffee but I also wanted a drink and got the best of both worlds!

Absolutely love the Chai Tea with some added CBD. Definitely a better spot to meet on a date than Starbucks. Prices are about the same or cheaper if you don't add CBD. They also are connected to Habit donuts whose pictures are posted in this review and they also do CBD. My donuts were actually gluten free too! Place was so good I took my daughter back for a second time. It's a short drive from Aurora for me but definitely worth checking out. I haven't had a chance to go to their other location but this one is great and plenty of restaurants within walking distance in case you want to grab a bite after. Can't speak on any food they make here as I've only had their coffee, Tea and Habit donuts. Give it a try if you're looking for something new. I enjoy about 30mg to 50mg CBD in my Tea. It is $2 for every 10mg as a heads up.

Carbon cafe and bar is one of my favorite brunch spots in Denver. Great for coming to hang and do work in a comfy/cozy/hip environment. Even better place to enjoy some delicious food with both indoor and outdoor seating. The coffee here is really great. All different kinds of lattes and cold brews with CBD options. I love the CBD cold brew. Happy hour from 3pm-6pm is $5 wine by the glass and $20 wine bottles. $5 well spirits. The Wu Tang Loaded Tots are a must. I love the breakfast bowl and the MC Habit breakfast sandwich. The employees here lovely. Emily and Sam are terrific. And after earting or just hanging out, stop by the doughnut dispensary for a little heavenly treat!

Coffee and food award 5 stars at both! The front patio is dog friendly, which was good as our pup got to tag along for breakfast and his water bowl was kept by the workers. Got the bowl for breakfast, the eggs were well cooked and the bacon was delicious.

I would give 6 stars if I could. My girlfriend and I had the chicken & waffles and the tot hash with brisket. Both meals were incredible. The chicken was perfectly tender, the smashed tots were unique and delicious. Both meals had an impressive blend of complex flavors. We left very satisfied, to say the least.

My first impression going was positive. It’s somewhat close to the REI Denver Flagship. I was drawn to the eclectic room and seating arrangements, the art, and, well, everything about it. This Carbon Cafe and Bar sits next to Habit Doughnut Dispensary, which sells a different flavor gluten-free doughnut everyday. That’s a definite bonus, for my family members who love doughnuts. The baristas at Carbon were friendly. So, I returned to check it out. Good place.

The coffee was amazing, hand-held cream, fresh nutmeg on top, to DIE for! Donuts were delish and I can't wait to stop in again. Bartenders were fun and chatty! Mid-afternoon on a Thurs parking was ample!

I came for the Gypsy Jazz jam. The drinks are a lot more expensive than other jams I go to. $8 for a small Belgian ale draft is a little exorbitant. One place I go a lot has twofers on $3 Rolling Rocks. Fun jam, though! But the pricey beer and having to get a cab home because the bus doesn't run after 10 will probably keep me away.

I was only there to meet a friend for coffee and convo, so I can't speak to the food or spirits, but this fun, funky, space is totally my style. On the old "burial grounds" of Paris on the Platte, a favorite spot to hang with my high school buddies in a sea of board games, Espresso, and clove smoke (when we were really feeling cool), they've memorialized the Carbon space with old hunks of graffiti walls and a door from "Paris." It's neat to see this area of town with its new spunk.
